The Duck-Rabbit Milk Stout is a traditional full-bodied stout brewed with lactose (milk sugar). Because lactose is unfermentable by brewer’s yeast, it remains in the beer. The subtle sweetness and fullness of flavor imparted by this sugar balances the sharpness of the highly roasted grains that give this delicious beer its black color. Bottle from Harris Teeter, Hampstead, North Carolina. Dark reddish-brown with a thin off-white head. Has a sweet nose, with a mildly sweet dark malt taste rather than any stated roasted malts.

Bottle poured into a pilsner showing pitch black with coffee black rims and very sparse latte colored foam. The nose shows a lactose sweet note throughout on top of a bed of roasted malts. The palate is light bodied with light carbonation. Immediate subtle lactose sweetness appears but closer to a soybean-like sweetness. Barely any bitterness. A bit thin on flavor all around and a very simple milk stout.

(Bottle) Black with ruby hints and thin tan head. Subtle aroma of oats. Medium body with nice carbonation. Gentle rich taste. Light sweetness. Some coffee or dark roast notes steadily develop. Nice stout, but nothing special.

Bottle @ home, thanks to jcnielsen for sending. Pours a deep reddish black appearance with a thin brown head. The aroma is a little ashy, some dark chocolate, light coffee, earth, and a little bit of milk sugar. Moderate plus sweetness. Moderate bitterness. Fairly well balanced. Burnt ashy woody flavor. Some coconut milk, earthy coffee. Fine.

12 oz bottle poured into a Spiegelau tulip. Black with 2.5 fingers of tan head. Aromas of dark and milk chocolate, nutty notes, caramel, cream, vanilla, a bit of cola. Tastes of dark and milk chocolate, light cola, some nutty notes, caramel, lactose. Medium body with a dry finish. Creamy mouthfeel, medium carbonation.
