Bubbles + Apples + Wild Yeast
Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Serve in chilled DeuS flute. Po raz pierwszy szampanskie piwo z UK. Choc smakowo blizej do Deusa, a wygladem do Malheura ze wzgledu na osadek. Pachnie i smakuje jakby gruszki i jablka skropione byly kilkoma kroplami octu jablkowego. Bardzo ozezwiajace, lekko musujace, wytrawne choc jablowosc wyczuwalne, pijalne nieslychanie i alkohol genialnie ukryty. Spodziewalem sie korka ale byl kapsel pod ta gruba warstwa wosku. A wiec szampanskie piwo w Sylwestra z odrobina francuskiego sera plesniowego. Happy New Beer Year to all Rateberian!!!

Bottle from Waitrose, drunk at home. Light golden yellow, almost straw, mostly clear, with a small but healthy bit of white head. Banana and pineapple notes mix with the funky yeast and raw alcohol on the nose. Nice, but it's a bit too boozy a smell. Sweet taste with candy sugar and pear drop notes tempered on one side with the bitter tangy hops, and on the other with the sour yeasty flavours. Applesauce and TCP in the aftertaste. Moderate carbonation. They throw a lot against the wall, and enough of it sticks to be a decent and enjoyable drink.

Bottle at mum and dads, Bonfire night, 5th November 17. Pours light, sparkling, straw colour. Aroma is apples, slight tart, yeast. Taste is sweet and some tart apples skin, only a little, yeast and barrel. I liked it not sure dad did. ABV is hidden, better than I expected. Bought at Waitrose.

Draught at BeerGeek Bar. Cloudy, gold colored. AROMA- fermented, apple, funky. FLAVOR- neutral, bitter, malty, apple, flowery, funky. Fuller bodied.

F: medium size, white, good retention. C: pale blond, hazy. A: a lot of saison spicy notes, bit brett, hay, fruity, peach, floral, cider, green banana, lemon, passion fruits, bit herbal, yeasty, grapefruit. T: saison back bone, bit cider, spicy, grapefruits, fruity floral, dry on the palate, alcohol is well masked and more noticed retronasaly, bit brett, hay, green apples, medium to full body, low to medium carbonation, not usual concept and the result is very good balanced beer, really enjoyed, 75cl bottle from Waitrose supermarket @ Albion Way in Horsham.

On tap at Beyond Beer, HH. Fresh beginning of apples and funk. Sessionable, the ABV is not there, hints of grain. Smooth, apples, funk, smooth sourness. Great!

Tap@Taphouse, Copenhagen - golden pour with a white head. Sweet malty and fruity with some notes of yeast, light brown sugar, overripe orchard fruit, light carbonation, yeasty, touch of spices in the finish.
