Bubbles + Apples + Wild Yeast

Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Tried on tap at the Strait and Narrow Lincoln. Hazy golden colour. Aroma has yeasty apples. Taste balanced sweet and sour. Medium body refreshing and is it really 9%.

Tap @ Mig & Ølsnedkeren, 9%. Slightly hazy yellow with small off-white head. Aroma is malt, yeast, spices, fruit peel and orange. Flavour is malt, yeast, spice,s orange, fruit peek, warming, sweet and a little bitter.

759 ml bottle. Pours a hazy gold/amber with light head. Aromas of apples and yeast and a bit of waxy lemon. Thick yeasty flavors with apple, pears, and old grapes.

Aus der Flasche 2017-04 getrunken. Ein typisches, gut gemachtes Saison. Hier dominiert eine schöne Hefenote mit einer sehr gut balancierten Hopfennote. Eine leichte fruchtige Bitterkeit von Grapefruitschalen rundet das Bier ab.

Nice fizzy-creamy mediumlasting head. Aroma is mild sour-ish yeasty, fruit stones, yeast, dried fruits, grass, minerals, hay, flowers, old citrus peel. Taste is harsh sour-ish, weeds, bark, fruit stones, yeast, hay, flowers, harsh citrus peel, cardboard, grass. Medium bitterness, harsh citrusy mouthfeel. Not my cup of tea.

750 ml bottle. Nose is bretty apples, spice, lemon, grapes, straw. Very dry flavor with apples, grapes. Fabulous sharp carbonation from the champagne yeast. Great.

On tap.@ Øst, Stavanger. Pours hazy golden with small white head. Aroma of lemon, honey, drain, flowers, strawberry, metal. Taste sour and bitter with some sweetness.
