Bubbles + Apples + Wild Yeast

Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Flavor is light sweet, light tart fruity, malt, yeasty, champagne / winelike notes, tart fruit, grapes, some alcohol. Medium to full, lively carbonation, warming alcohol in the finish. 091016

Bottle, 75 cl. It’s a lightly unclear golden colored beer with a finger thick white head. Lacing. Citrus, pine cones, pale malts, some funk and peppery notes in the aroma. It’s full bodied and soft on the palate with a nice bitterness. Some greiat notes, but mostly citrusy, piney hops in the flavor. Pale malts and a wee pepper touch in the back. Long finish. Overall, a tad yeasty, but sure nice. 160102

From Tap. Leicht trübes goldgelbes Bier mit einer mittelgroßen weißen Schaumkrone. Geruch nach reifen milden Äpfeln, hefig, Gewürze, helles Malz. Geschmack sehr würzig malzig, hefig, Kräuter, wenig fruchtig.

KRS/KØLF 020116. Golden colour with a white head. Aroma is yeast, malt, berries, spices. Flavour is yeast, malt, berries, spices, fruit, dried fruits, apple. Full bodied nice beer.

Sampled at a tasting. Hazy yellow pour with a thin white head. Smells like lemons, brett and bubble gum. The taste is quite brett forward, with notes of bubble gum and grapefruit. Rough mouthfeel, high carbonation and bitter aftertaste.

Bottle. Pours hazy yellow, with a bog creamy head. Aroma is sweet, with wooden yeast and apples, as well as fruit peel and some malty notes. Creamy body, with average to fizzy carbonation. Flavour is sweet yeast with wooden notes, as well as kandi and some hot notes of alcohol.

Pours hazy golden with a white head. Aroma has notes of malt, yeast, dried fruits and wheat. Taste is medium sweet and light bitter with a long warm, yeasty and fruity finish. Body is medium, texture is oily, carbonation is soft.
