Bubbles + Apples + Wild Yeast
Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Nice white wax dripping from the cap of the bottle. Crazy carbonation forming a big white head that stays quite long. Mildly hazy light-golden colour. Loads of fluffy lacing. Apple aromas with some light grassy hops. Pretty hoppy taste for such a high alcohol percentage. Fruity notes from the malts and yeast as well. Hints of citrus and light tart in the mouthfeel. A different type of Saison, but not bad, with the alcohol very well-hidden. Pretty interesting !

750 ml bottle. Unclear yellow body with a big, creamy, lacing white head. A bit but delicate aroma of citric fruit, spices and yeast. Flavor is sweet and slightly acidic with mild malt, citric fruit, spicy yeast, some cellar notes and moderate bitterness. Balanced in flavors, balanced in body and pleasant aftertaste. Very nice Belgian ale with elements from Saison.

(Draught at Mother Kelly’s, Bethnal Green, London, 26 Nov 2015) Hazy orange colour with frothy, white head. Fruity nose with canned peaches, citrus, apples, vinous hints of champagne and a touch of honey. Fruity, malty taste with notes of dried fruit, apricots, apples, bready champagne flavours and a dryish finish with low bitterness. Almost full body, with just a touch of sweetness. Quite different, with hints of champagne and apples, but really tasty. Nice one.

Bottle shared at a tasting. Thanks Jay! Hazy copper with a soapy white head. Green apple, young grape, pear and alcohol on the nose. Tastes fairly simple. Not really sour at all, with a faint tartness. A bit too boozy on the finish.

Bottle: Poured a cloudy bright beige/yellow color ale with a nice huge white foamy head with good retention and some lacing. Aroma of residual sugar with nice fruity ester, some ripe apple notes and some cereal notes. Taste is an easily drinkable mix of ripe apple notes, with a solid malt backbone with some residual sugar notes and some light hops also noticeable. Body is full with great bottle conditioning and good carbonation with no apparent alcohol. Love the mix of apple and Belgian malt and the overall balance of this beer.
