Bubbles + Apples + Wild Yeast

Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Bottle from UtoBeer shared at Rich’s Massive Cellar Emptying Tasting. Ninkasi 9% It’s a light opaque gold with a huge white head that was a slow gusher. It’s got a bright bready apple struddle aroma. Lovely soft body. Bitter metallic Bretty finish on a light Apple & wheat body.

Bottle @ Drink Rich’s American beer, thanks to KansaiBeerLvrs. Dorée léger toruble, col blanc crémeux tenace. Arôme au bouquet agréable offrant un houblonné fleuri et fruité, le tout présente moins le côté funk que l’on retrouve sur d’autres versions de Wild Beer. Palais est houblonné avec ce côté à cru. Les houblons sont plaisant et offrent de belles pointes fleuries. Le tout rappelle une bonne ’session ale’ malgré ses 9%. Pointe de levure sauvage, épicé et un léger fini levure belge laissant pensé à l’abricot mais avec une petite note funk.

Little cloudy orange to yellow beer, very big aery white head, pretty stable, adhesive, leaving some nice lacing in the glass. Aroma: very fruity, citrus, peaches, some grapefruit, mandarins. MF: soft carbon, medium body. Taste: sourish start, bit soapy, hoppy, citrus. Aftertaste: hoppy, bitter, grapefruit, soapy touch.

Brown bottle, 750 ml, via Philippe Boutin (merci!), savoured on August 9 2015; eye: caramel with an orangey hue, hazy, good sheet of white head, slight lacing; nose: fruity, wild yeasts, Belgian yeast, light coriander, floral hops, slight apple; mouth: fruity, Belgian yeast, wild yeasts, coriander, green apple, floral hops, "champagne", semi-dry finale in wild yeasts with presence of coriander, medium body, quite carbonated, slightly bitter; overall: quite fine FRANÇAIS Bouteille brune, 750 ml, via Philippe Boutin (merci!), savourée le 9 août 2015; œil : caramel avec une teinte orangée, trouble, bonne couverture de mousse blanche, très légère dentelle; nez : fruité, levures sauvages, levure belge, léger coriandre, houblon floral, très léger pomme; bouche : fruité, levure belge, levures sauvages, coriandre, pomme verte, houblon floral, « champagne », finale semi-sèche en levures sauvages avec présence de coriandre, corps moyen, très carbonatée, très légèrement amère; en résumé : bien bon

750ml bottle, thanks Basisti!

Pours yellowish orange with a smooth head. Aroma of tart apples, wood, yeast, ripe fruits and yeast. Taste is crisp, fruity and slightly yeasty with some tart apples. Finish is crisp, yeasty and stuffy with some tart apples. Okay.

Wow what a nice tasty beer. Saison meets some citric hops with a strong Belgian twist. Dangerously easy to drink. Smooth nice body and a fine carbonation. Citric, fruity, Belgian yeast and some spices. Recommendable!

Keg at Brewdog, Shepherds Bush, London. A hazy golden coloured pour with a healthy white head on top. Belgian, fruity, yeasty aroma. Tastes similar, fruity, yeasty, spice, slightly sweet. Nice one.

Bottle at home. Pours a slightly hazy straw color with a big, creamy, off-white head. Fruity aroma with apples but also lots of pale malt, hay, spices and lemon juice. The flavor has more hay, grass, hops, alcohol warmth and chili (!) in the aftertaste. A little dry in the end. Has a slick and light mouth feel, medium body and a light to medium bitterness. A very complex beer with an incredibly interesting aroma. The flavor lacks a bit fruitiness. Would be great with cheese.
