Two-year-old Lambic in which elderberry flowers have been soaked.
The character of the elderberry flowers lends this beer a very pronounced, floral taste that is nevertheless very refreshing.
Since 2008, once a year Cantillon Brewery has produced Zwanze, a special-edition beer that is completely different each time around, with Mamouche originally appearing as Zwanze 2009. This beer is completely different from anything else produced by Cantillon, and we decided to continue producing it on a regular basis. Mamouche is what the seven grandsons of the Van Roy-Cantillon family call their grandmother, Claude Cantillon. As such it is the counterpart of the Lou Pepe beers.

2016. Hazy golden with white head. Massive floral and cow parsley juicey roadside floral and grassy notes. Light nutty and fruity. Big bectar and light honey. Grapes, apricot. Moderate sour and bitter, light sweetness. Medium body and soft carbonation.

Poured from a 2010 vintage bottle. Aroma has a moderately strong, peppery, elderberry flower note. Moderate earthy funk with lighter herbal notes. Medium lemon rind notes with hints of grain. Pours a slightly hazy, dull, golden-copper color with a large, frothy, white head that exhibits really nice retention as it slowly recedes. High amounts of lacing and faint legs. Flavor is similar to the aroma with a dry finish and moderately strong, well rounded acidity. Quite a bit of the peppery, elderberry flower notes, but a bit more lemon rind and funk than in the aroma. Funk is more herbal, but with a definite earthy note as well. Mouthfeel is medium bodied with medium high to high carbonation. Low astringency and low alcohol warmth. Overall, this is one of my favorite yearly Cantillon offerings. I really love the peppery, elderberry flower notes and think it plays really well with the Cantillon funk and lemon notes.

Bottle shared at the source. Pours light hazy orange, not much carbonation there. Nose is soft, lightly acidic, some fruitiness and fragrant funk overall. Taste brings out lots of elderflower, really liking its soft velvety touch. Light herbal character giving way to slightly bitter and tannin-filled finish. Displays the flower nicely, another masterpiece from Cantillion.

Pour at 6 degrees north, nose us mandarin, elderflower, Brett. Palate is nice mandarin, orange, apricot, citrus. Very tasty.
