A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks.

3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley! My first new label, I think, perfect. Absolutely perfect (for me). Rustic funk, medium apple lemon sweetness, perfect medium carb, dry lingering finish I love.

0,375l bottle at home. amber hazy color, small white head. smells earthy, herbal, funky, cheesy, light stone fruits and apple notes, oak, very nice smell. full body, pearly carbonation. tastes oak, some green apples, citric, grassy, light stone fruits, light plums, bit peppery, cheesy, earthy. finishes very balanced, almost sweet with notes of cheese, oak and some green apples. love the subtle yet pearly carbonation. this drinks so smooth, very mellow, almost no sourness, more on the funky side. lovely.

Bottled 18.04.2017. amber murky color, small white head. smells nice funk, earthy, grassy, wood, oak, cheesy, horse blanket, lovely smell with an amazing balance. full body, soft carbonation. tastes grass, earthy, bit citric, bit peppery, tobacco, some stone fruits, light sherry notes, nutty. finishes lightly sour with notes of tobacco, pepper and some sherry notes. very very nice one, these early screenprint bottles are starting to shine now. great stuff.

Bottled . amber hazy color, small white head. smells cheesy, funky, brett, some oak, stone fruits, hay, very nice smell. medium to full body, pearly carbonation. tastes citric, funky, cheesy, earthy, peppery, grassy. finishes lightly dry and light to medium sour with notes of citrus, blue cheesy and some funky notes. very very nice one, lovely balance.

375ml bottle [bottled 23/01/2015]. Opalescent, amber colour with average, thick, firm, frothy, moderately lasting, minimally lacing, white head. Slightly tangy, woody and fruity aroma, hints of oak, blue grapes, a touch of balsamico. Taste is tart, tangy, slightly fruity, minimally woody, notes of old lemon peel, some lime, hints of grapes, oak, a touch of vinegar. Watery texture, smooth and soft, minimally astringent palate, medium, foamy, mildly prickly carbonation. Light, refreshing, rather drinkable - nice.

30 May 2021. At 't Oud Clooster, Ghent; cheers to Anke! Asssemblage II, sz. 18/19, bottled 7/12/18. Hazy orange, stable, frothhy, off-white head. Aroma of dusty attic & damp cellar, rhubarb, musty horseblanket, wet grass, oak, old apricot, white grape, cheese. Taste has sour grape, plum & gooseberry in a funky yeast & cheesy profile with oak, horseblanket and lemony edges. Grassy hoppy finish, wet wood, slight vinegar, funky leather and lemon acid, very soft alcohol glow. Medium body, slick texture, fizzy carbonation. Masterpiece!
