Our sour cherries, which are certified organic, come from Turkey. The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.
We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

All'olfatto si esprimono sentori di sour. La finezza olfattiva L'intensità olfattiva è elevata e l'esistenza olfattiva è sufficiente. Il manto birroso superiore è evanescente. La grandezza delle bollicine è medio-fine. Il liquido è di apparenza velata. Il colore è rosato carico. Il corpo è strutturato. L'amaro è pronunciato e c'è anche una componente pesantemente acidula. La forza gustativa è elevata e la permanenza è buona. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è di decente intensità. Al palato arrivano impressioni di miele, frutta secca, agrumi, arancia rossa, limone e ciliegia.

Aus der Flasche (bottled 04.06.2025/bbe 04.06.2035) im 2025-08 getrunken. Diese rote Ale zeigt deutlich sein Kirscharoma. Der Säuregehalt ist deutlich aber gut balanciert. Ein klassisches Kriek in perfektionierter Handwerkskunst.

Pici, azonnal elolvadó hab, mélyvörös szín. Savanykás, meggyes, enyhén istállós illat. Fanyar, meggyes, enyhén istállós, picit vörösboros íz. Közepesen testes, közepesen szénsavas, nem keserű. Isteni.

Bottle from The Beerhive (2025). Hazy ruby body with a bright pink head. No visible carbonation. No lacing. Aroma of cherry, cranberry and barnyard funk. Flavour of sour cherry with a very tart finish. Thin to medium body with a slick texture. Light fizz. Refreshing and zingy. It’s very tart and sharp; I prefer a touch more sweetness.

Cloudy to hazy deep red with a perfect pink head. Sour cherries, barnyard, basement, dust, funk, vinegar, cherry stone, tannins. Dry, Tart. Light to medium sour. Perfect.
