A one-off brew with a variety of malts to get to a higher density after boiling. Candied sugar was also added during the brewing process. Except for the low wheat percentage, the process of this beer followed the traditional lambic tradition.

Bottle, 750 ml at charity tasting Wien 2022. Shared with Miro B, Werckmeister and others. 2008 vintage. Dark orange, almost no head. Caramelish, some sugar, toffee, fruity notes, sweetish, low to moderate sourness, low carbonation.

0.75 l bottle from 'Etre Gourmet' as '3 Fonteinen Strenge Winter', n°53 • 19 - 20, bottled in February 2020. Hazy, deep reddish amber with a thin, foamy, almost stable, off-white head. Slightly sweetish, sourish, gently fruity and slightly funky aroma of brown sugar, overripe lemon, some honey, prune, some oak and traces of glue. Slightly sweet, quite sour, moderately fruity and slightly funky taste of overripe lemon, brown sugar, oak, some horse blanket and light honey, followed by a short, quite tart, rather woody-dry finish. Medium body, fairly astringent, rather smooth and gently effervescent mouthfeel, soft carbonation. Very interesting beer, lots of lambic character even without any raw wheat. Still a little too acidic for me to be truly great.

75cl bottle. A clear amber beer with a white lacing. Aroma of sour red fruits, caramle, red grapes, some wood. Taste of sour red grapes, vinegar, some caramel, peaches.

2020 version. Clear brown with a dense cream head that fades to a coat. Aroma of prunes, old lemons, toffee. Medium bodied, slippery with low carbonation. Sour with mellow cooked autumnal fruit, some caramel, bracken towards the end. Off dry finish. Swiggable, food friendly.

Flaska från 3F vinterpaket 2020. Drucken som Strenge Winter. Mörkare bärnstensfärgad med liten off-vit krona. Sockersötma, farinsocker, karamell, creme brule, brynt smör, kanderade/övermogna äpplen. Låg kolsyra. Farinsockret ger en smak som nästan påminner om lite oxiderade inslag.

750ml bottle. Sweet, sourish and syrupy with some funky farmyardy yeastiness, sugary notes, caramel and sour berries. Okay, quite sweet and almost faro-like.

Many thanks for this rare Faro-Lambic to Koelschtrinker. Vintage 2008. (from january). 12 years old Lambic. I feel like in heaven. Niesamowita moc aromatu octu winnego, melasy, nieco zupy grzybowej. W smaku piekielnie kwaskowe lekki spalony karmel, creme brulie z dodatkiem kwasku cytrynowego, doskonale, fantazyjne, erotyczne i podniecajace, tak wyraziste i przyjemnie kwaskowe, szlachetnie wytrawne, metne, o barwie ciemno brazowej, nie wiem co jeszcze napisac. Jest fantastyczne. Wspaniale podkreslalo swiateczny objad w rodzinie do roladek, ziemniaczkow i mizerii. THX Roman for this fantastic Lambic.

Bottle shared. Pours hazy muddy brown with a small bubbly white head. Aromas of oxidized lambic, caramel, cardboard, orange, vinegar, cellar, dark fruits. Taste has caramel, bright acidity, light vinegar, dark sugar, orange peel, nutty, oxidized malt.
