An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree," and its wood has been used in South American wine-making communities.

This highly roasty and malty brown ale clocks in at 12% ABV. A huge hit at our Rehoboth Beach brewpub when first released in November 2006, Palo went into full production at the end of 2007.

At 10,000 gallons, our two Palo tanks are the largest wooden brewing vessels built in America since before Prohibition (and we have three same-sized oak tanks right next to them).

Bottled into trappist glass. Pours a very dark brown to black with a small tannish head. Looks to be no real lacing. Aroma is candyish chocolate. Taste is wow - I’m getting a very bitter dark high cacao-ish chocolate taste with malts, some alcohol burn and a lot of wood in the aftertaste. Nice little hops bite too. A lot going on here, it’s like an Andean flute band meets Jimi Hendrix meets a barber shop quartet.

Bottle. Very deep brown, almost black. Huge, bubbly , brown head. Aroma and taste is like a very fine imperial porter. Nice beer.

Pours like an impy stout, very very dark, and a thick beige head. Aroma is odd.......quite smokey, with notes of soy sauce, and burnt malt. Flavour is again quite odd. Its very earthy, and a touch spicy. Im getting some soy again, with mollasses, and some earthy woodiness that must come from the wood. Very complex beer.

Bottle shared at Columbus tasting 29/09/2022. Thanks to Leighton for this one. A clear dark mahogany brown coloured pour with a fading loosemid tan head. Aroma is semi sweet, nutty malt loaf, dried fruit, apple, cinnamon, soreem, some age. Palate is medium sweet, rounded, fine carbonation. Flavour is composed of semi sweet, rounded, layered malts, malt loaf, fruit cake, nutty, some age. Palate is semi sweet, slightly oily, moderate carbonation. Good stuff.
