An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree," and its wood has been used in South American wine-making communities.
This highly roasty and malty brown ale clocks in at 12% ABV. A huge hit at our Rehoboth Beach brewpub when first released in November 2006, Palo went into full production at the end of 2007.
At 10,000 gallons, our two Palo tanks are the largest wooden brewing vessels built in America since before Prohibition (and we have three same-sized oak tanks right next to them).

Indicated as bottled on 10/9/20, I have a single 12 oz bottle that was purchased weeks ago at The Cellar, the closest beer shop. Using my Buffalo Bayou snifter I see an immaculate brown body with a slim head of light tan foam. A nice nose, I determine ripe fruit, brown sugar and toffee. The glass is lifted for a drink, caramel, wheat bread, pecans, karo syrup, some woodiness and a boozy effect. I feel a bit of a burn as it goes down. Thick and potent, as good a brown ale as I have had.

Bottle from Kris Wines. Dark dark brown colour with small dark golden head round the edge of the glass. Very thick when pouring. Aroma is ultra roasty, bit of booze there too. Some herbal element/medicinal and some nuttiness. Taste is sweet boozy, bit of coffee bitterness, and something which I guess could be the smoked wood. Lots of dark fruit too and some vanilla. Texture is quite oily and thick. Goes down very smoothly. Bit of a knockout beer, and so much going on it is a bit hard to pinpoint stuff. Really nice.

Bottle from Cracked Kettle. Black, opague. Malt, apple syrup and vanilla in the aroma. Very sweet flavor. Malty, woody, vanilla, licorice, ash, laurel. Rather alcoholic, still quite drinkable.

Pours nearly black, small tanned head. Smell is rich, complex, woody, dark fruits. Heavy. Taste is very roasty, intense, tad bitter, slight umami features. Fleshy, almost. Decent, but not overwhelmed.

12oz bottle from ES. Appearance: very dark brown with a beige head, stout like view. Aroma: caramel, roasted malt, iron, dark fruits. Taste: along the same lines, burtn wood notes. Overall: nothing complex, ok.
