An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree," and its wood has been used in South American wine-making communities.
This highly roasty and malty brown ale clocks in at 12% ABV. A huge hit at our Rehoboth Beach brewpub when first released in November 2006, Palo went into full production at the end of 2007.
At 10,000 gallons, our two Palo tanks are the largest wooden brewing vessels built in America since before Prohibition (and we have three same-sized oak tanks right next to them).

Bottle pour into nonic pint glass, aged 1 year (born on 2/18/18). Appearance is very dark brown--almost opaque--with minimal sparkle at the edges of the glass, less-than-finger-width fizzy light brown head with poor retention and no lacing. Aroma is initial strong plum after opening, as it warms mainly roasted malt and vanilla. Taste is dark fruit, sweet, rich caramel, vanilla, touch of alcohol, anise, nuts, wood. Palate is medium side of light-to-medium bodied with thin texture, average carbonation, numbing of the lips, and sweet finish as taste. Overall,

330ml bottle. Pours very dark brown. Coffee, plum, blackcurrant, liquorice, Christmas pudding, brandy, bit of vanilla, fair bit of booze. Medium body. Nice enough.

355ml bottle. Pours an opaque black with a small, creamy, long lasting, tan head that laces nicely. Aroma of roasted malt, vanilla, caramel, prunes, dates, alcohol, wood and a hint of smoke. Sweet, complex flavour of roasted malt, prunes, dates, brown sugar, molasses, vanilla, caramel, licorice, dark chocolate, coffee and wood with a dry, warming booze finish. Full body with a creamy, smooth, oily texture and soft carbonation. Tasty and complex. Excellent.

Poured from bottle nice dark brown with a creamy cocoa head. Aroma is roasted malts earthy grains wood alcohol. Taste is creamy roasted chocolate earthy wood hint of alcohol really nice brew.

A near pitch black pour with the slightest of brownish hues, I got a +1 finger head of tan foam. Excellent head retention and lots of lacing.
I get a lot of wood in the nose along with some fruit. licorice, chocolate, and some caramel malt.
The taste is a malt lover's dream. Malty sweetness with some roastiness..it kind of has that Milk Stout malty flavour. Yum. Plenty of chocolate and some coffee and the woodiness adds a nice dimension without being over powering, and I get some dark fruit flavour and licorice as well.
Mouthfeel borders on thick, carbonation is lightish, and it finishes with a nice fruity flavour that brings just the slightest amount of tartness with it. Man, and the alcohol is *very* well hidden; sure there's *some* warming after the swallow but it's minimal for such a big beer.
Bottom line: I really like this American Brown Ale as it has all sorts of good flavours going on and it's a wonderful sipper. Highly recommended!
