Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Bottle at Far i Hatten, Malmö, April 2012. Hazy orange with a small white head. Aroma and taste of fruit, yeast, coriander and some malt. Dry finish. Drinkable.

A little bit of fruitiness and some hard bitter hops on this one. Tastes a little more like a pale ale to me, with a little more character. Medium body. On tap at beerbistro

Refrigerated bottle obtained through trade with pushkinwow poured into a trappist glass. Pours translucent yellow with finger of bright white head that has great staying power. Some lacing, medium body, well carbonated, and yeasty aroma. Taste is complex yeasty citrus and finishes dry.

(341ml bottle from LCBO, aged 1 year) Poured into a Duvel tulip, dark gold in colour with a pillowy 1.5 inch head which left some ’Belgian’ lacing. Aromas could have been stronger, a little bit of spice, some citrus, dry yeastiness. Flavour better, pale malt, some honey sweetness is balanced by spice and a drying bitterness from the hops so it is not cloying. Fairly full-bodied and smooth in the mouth, carbonation soft and fairly Belgian in character. As I remember, better without ageing so I will have to try it fresh again, but still quite enjoyable.

Bottle. Nice head with good duration. Color is golden with yeast sediments. Aroma and taste are fruits, yeadt, caramel, malt and hops. Great taste.

Nice hazy chewy orange coloured body with a bright golden glow and a thin, one centimetre tall off-white head. Aroma of yeast, bubble gum, bananas, coriander seed, wheat and a nice candy sweetness. Medium-bodied; Strong spicey flavour at first with good malt and a nice yeastie touch with plenty of balancing sweetness and a good herbal hop note. Aftertaste shows a good bit of complexity with the yeast, alcohol and spices the clear winners on the tail end. Overall, a very nice beer and definitely worth trying! I sampled this 33 cL bottle purchased from Liquor Outlet in Boonton, New Jersey on 11-July-2010 sampled at home in Washington on 09-June-2011.

341ml Bottle pours out a cloudy straw topped with a white head. Aroma was of belg yeast, caramel, a nice hop mix some floral, grass, pine, and a nice bread malt. Taste was much as the aroma with a good amount of sweet malts and some fruit.

From a 341(?!)ml bottle on 31/1/2011. Pours a murky golden. Has a sharp yet understated aroma of fruit, spices and a touch of Belgian yeast. There is more spiciness and fruit (apples) when it hits the mouth, with a distinct bitterness which is dry and both salty and peppery (in a good way). A quite subtle but complex beer which is most enjoyable.
