Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Pours a slightly cloudy golden straw color with a bubbly white head. Seems like its a little over carbonated, gives me a few inches of head then subsides back to a cap on top of my beer. My first whiff of this brew right after I opened the bottle was of citrusy hops. That disappeared after I got it in the glass, could be an anomaly. In the glass I smell a spicy peppery bready yeasty brew. Taste is yeasty peppery bready as well. The carbonation of the beer actually seems a bit light, weird! Medium body with a dry spicy finish. Good brew, I could drink a few of these.

Bottle, 6.5%. Spicy aroma, some green apple, cinnamon. Cloudy grey orange colour. Good stable white head. The flavour starts off a little sweet, fruity and spicy. Turns more alcoholic with melony fruit notes. Even seems to have a hint of chilli in the finish. High carbonation.

Big offwhite head. Hazy deep yellow body with strong carbonation. Milky fruity papery aroma with resiny spicy notes. Dry-sweet spicy milky honeyish taste with resiny fruity notes. Slightly hot mouthfeel. Mid-bodied. Dry resiny earthy citric aftertaste with tropical fruit notes. Nice, but a bit milky and harsh. Possibly a bit old. (0.341l bottle, Ølbutikken, Copenhagen.)

Bottle. Pours cloudy golden. Nose of hops, yeast and fruit. Taste is citrus, extremely bready malts and yeast. Very bready.

330mL bottle, pours hazy golden with a big white head. Wonderful aroma of hop flowers, spices, fruity esters, yeast, citrus and orange zest. Flavour follows accordingly, with spices and orange zest up front, and hops and citrus on the finish. Excellent Belgian ale.

Comes in bottles now at the LCBO, with 7% ABV. Pours a cloudy beige-orange colour with a big amount of tiny particles floating everywhere. Its off-white head is beautifully creamy, long lasting and creates great lacing. Nice aromas of spices, Belgian yeast, mild earth and quite hoppy as well. Refreshing dry mouthfeel. The taste has the hop, again well-balanced, with a good mix of sweet fruits and the Belgian goodies. Very well-balanced Belgian-style beer that I would drink anytime.

33 cl bottle. Murky golden color, large thick white head, solid lacing. Aroma of white bread and subtle orange peel. Taste is yeasty, lots of malt, bitter orange in the middle and the finish. Nice body. Decent.

Bottle. Creamy white excellent fully lasting head. Yellow colour. Moderate malty and hoppy and yasty fantastic well-balanced aroma. Nice fruity esters present. Moderate bitter nice fruity flavor. Average moderate bitter finish. Creamy palate. Excellent belgian Ale.

Bottle. Pours hazy orange, creamy white head. Aroma of spices, ruby grapefruit, nectarines, light bread dough. Taste is full of spices upfront - white pepper, coriander, bay leaf. Sharp citrus on top of more rounded orange flavours. Bitter medicinal finish. Good flavours , but out of balance a little for mine - a little more malt or dank or not so much hop would have worked better for me.

Pours pale amber with a lively small streams of carbonation feeding an impressive head and lacing.Nose is very fruity with white grapes, peaches and pears. Add to that some spicy, herbal hops and phenols and you have quite a complex yet light brew.Flavours are equally fruity with more grapes and pears along with more of those cloves. Unfortunately the bitterness is harsh, sharp and 1-dimensional.Light body with moderate carbonation suit the beer well.
