Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Bottle. Golden- orange colour with a white head. Aroma is citrus, apricot, alcohol. Flavour is dry, malt, hop, citrus, sugar, apricot, alcohol. Nice beer.

Aroma: The nose is tons of orange, some floral and other citrus notes
Appearance: Somewhat cloudy golden-orange color, with a big fluffy white head and lots of lace
Flavor: The taste on this one is somewhat sweet, with a decent hop presence too
Palate: It is a medium bodied beer, with a creamy mouthfeel, and a soft carbonation
Overall Impression: This one is pretty nice overall. A strong orange presence is the leading component of this beer. It seems to be rather dominant.

Bottle. Pours cloudy gold with a staunch, white head. Nose holds a good deal of malts, along with some earthy hops, some cloves and peppery spice. A rather sweet, malty character enhanced with some floral and resiney hops towards the end. Supporting roles played by light fruits, spices, Belgian yeast. Pretty nice. Fits the style I have noticed of most Dieu du Ciel beers, that is to say good, above all, but also marked by a certain spiciness and malt/hop balance that they routinely achieve.

Bottle. A hazy, orange-golden beer topped by a dense, white head. Peppery, resiny nose with apricot, white sugar and some alcohol. Alcohol, peppery hops and some apricots in the flavor, leading to a bitter, resiny finish. Full-bodied and effervesecent. A nice beer, especially enjoyed the peppery touch. 091127

Bottled@Bishops Arms Vasagatan, Stockholm. Hazy golden orange colour with particles floating around. Aroma is spices, caramel and some mild wood. Flavour is wood, spices, some earth and mild herbal notes as well.

Hazy blond yellow color, small white head. Belgian style yeasty fruity (mango, peach) aroma. Yeasty, fruity (peach, mango), spicey (white pepper) and hoppy flavor. Very Belgian. Enjoyable. Lots of yeast in the bottom.

(Bottle at Maltainen Riekko, Helsinki) Poured golden and almost clear and turned cloudier later on. Head was medium sized and white. Aroma contained very strong fruity hoppiness, sweet honey like notes and Belgian style yeast. Palate was medium bodied with quite high carbonation. Flavours were hops, fruitiness, citricness, sweetness, honey, Belgian style yeastiness, saison like sourness and bitterness. Aftertaste was bitter and fruity.

33cl bottle at home. clear yellow, thick smooth offwhite head. wonderful citrussy, slighlty bretty, slightly sour, yellow fruity, yeasty, perhaps wheaty aroma. faint flowery hops top it off. very refreshing. flavor is yellow fruity, quite bitter, mix of hops and spices probaly responsible for that.. somewhat less flowery than the aroma, and the flavor also have licorice, anise. a lot of taste for a 6.5% alc. beer. very refreshing but also very bitter at the same time. A little too spicy for my taste, a lot of the flavor seems to be from spices.
