This deep-brown winter ale offers up complex aromas of fruit, alcohol and hops. The boozy mouth feel is vaguely sweet with hints of brunt caramel. Up-front bitterness accompanies a surprising element of complex red fruit, followed by an expressively hoppy finish. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.
This beer was first crafted at our Montreal brewpub in December of 1998.

Tap. Dark, off-white head. Fruity coffee sour, but only slightly. Soft, but burned roasted sour edgy coffee. A long lasting smooth warm boozy coffee aftertaste, burned, roasted.

Tap at muted horn. Hazy red amber, offwhite lacing cream. Berry and brandy baba start, medium full, mellow sparkly, honey, fruit/berry melanoidin, broad caramel malt notes, lightly boozy. Classic winter warmer.

Mørk brunrød med beige skum. Lukter røstet malt, karamell og mørke stenfrukter. Kraftig og maltpreg i smak. Brent karamell og alkohol. Sitter igjen med noe brent karamell og tørrhet i avslutningen.

341ml Bottle come from 2019 (I think?). One year aging in cellar. No i jest swietne, oplacilo sie. Jest to w tym stylu jesli chodzi o piane, chyba jedno z wiekszych jakie spotkalem. niesamowicie trwala, sporo czasu uplynelo nim opadla i mozna bylo degustowac, niemal wiecej czasu niz ilosci wozow wywiezionych wyladowanymi kosztownosciami z Wawelskiego skarbca, a wozow bylo az 362, oczywiscie przez szwedow. barwa miedziano-rozana, lekko metnawa, pachnie zgniecionymi sliwkami lub kompotem z nich. truskawki, maliny, nieco karmelu, odrobinka jakis przypraw orientalnych i sporo amerykanskiego chmielu. Swietnie to i umiejetnie sparowali. slodycz mniesza sie z chmielna wytrawnoscia. alko ukryte, niestety nie daje rozgrania jak slabsza w alkohol Ola Dubh wczorajsza. ale i tak dobre to kanadyjskie barley wine.

2019 bottle, 13C. Deep reddish brown with a fat coat of beige head. Gentle aroma of singed toffee, biscuit, stewed and dried fruit, a touch of roast. Getting towards syrupy. Sweet but then intensely bitter with burnt and roasted flavours joined by bitter oranges. Alcohol is well integrated. I liked the balance but it might be a bit fierce on release. Good.

From a 341ml bottle on 27/10/2020. Pours a deep amber with a smallish head. Smells of caramel and spicy fruit cake, with a whiff of booze. The flavours are intense, caramel, a bit of toffee, brown sugar, vanilla, dark and dried fruit, aniseed, with some big, quite sharp resiny, herbal hops finishing off proceedings. The mouthfeel is oily, the carbonation softish. A big, challenging, rewarding barley wine.

On tap at Tørst. Pours dark brown. Toffee, burnt caramel, dried fruit, toast, prune. Medium body. Good.
