On 22nd July 2016 we produced a turbid wort in the style of traditional Lambic producers. This was fermented using lees (previously used to ferment Foxbic) from cider producer Tom Oliver, and aged in two old oak barrels for fourteen months. One barrel was dry hopped and became Saison Lees. The other barrel was left unaltered and allowed to age further in bottle before release. The result is a paler, drier and more refined beer than its counterpart.

Bottle at the 'Mere, Happy New Years (Tipples had) Tastang, thanks to Dave 21/01/22. Lightly hazed orange with a white cap that dissipates edgewards. Nose is tangy citric zip, grass, spice, herb, faint apple orchard. Taste comprises funk, straw, apple orchard, herb, lemon tang, stoned fruits. Medium bodied, fine carbonation, semi drying close with a light acidic rasp. Decent.

Bottle at happy new year tasting. At Colin's. 21/01/2021. Many thanks to Wingman for this one. LIGHT hazed yellow straw coloured pour with a hazed white head. Aroma is nice funky horsey, bretty, waxy lemon, wheat,. Flavour is composed of, light grains, wheat, funky lemon, verbena, horsey funk, white grape, funk. Waxy. Palate is light funk, tang, higshih carbonation,.

Tasting at Chez Bois. Thanks to Wingman. Light haze on this pale yellowish gold beer, small pale cream colour head. Palate is light and semi dry, good fine minerally carbonation. Thin malts, mildly sweet. Good level of funk here, mildly savoury never bitter. Trace of white wine spritz. Modest citrus. Light crisp finish. Clean and drinkable. Not the second coming.

Bottle shared in Hazlemere - cheers to Dave. Pours mostly clear yellow with a small creamy white head. Lightly sweet, quite dry and musty, apple notes, pale wood. Light bodied with lively, massaging carbonation. Drying finish, funky, musty, lemony, some bitter straw, relaxed acidity. Solid.

Bottle, shared at Northern Monk. Hazed, straw colour. Bright white foam. Nose has lemon rind and juice. Touch of vanilla. Light, bretty, woody funk. Touch of leafy hop. Taste is dry, tart, with a little herbal, floral bitterness. Dry and light bitter finish.

Bouteille 75cl @ Annual Tilquin Enthusiasts tasting. Merci Rich. Bottled 09/2017, BB 09/2022. Couleur paille claire, col blanc. Arôme distinct de pommes-cidre, petite note rustique avec une pointe acerbe en rétro nasal. Palais est axé sur un bel usage des pommes - cidre marqué avec un côté plus funk qui perce en retrait. Fini un peu sur l'aigreur et pomme verte.Bonne découverte au début qui retombe avec cette aigreur marquée en fin de bouche.
