A tropical double IPA with a death metal kick to the codpiece
Collaborators: Beavertown / Garage Project / Stone
Glorious-crank-it-to-‘11’-cacophony is what happens when intense tropical fruit gets a flashpot addition of pyrotechnic heat from habanero. The result is a literal world tour, as three globe-trotting breweries collaborated on this immensely thunderous soundstorm of a beer.
Masters of brewing Beavertown (UK) and Garage Project (New Zealand) worked with us in San Diego to brew this double IPA with a power trio of kiwi, yuzu and habanero. Yuzu and habanero, sure, but who knew kiwi fruit could be so metal. Add in a colossal hop character to ride the lightning of the subtle but fiery heat. Hops, fruit, heat…And Juiciness For All.
Call up your mosh mates, crank up the tunes, throw this beer in the fridge and chill ‘em all.
We have known the Garage Project guys, Pete Gillespie and Jos Ruffell, for a while and have brewed with them a few times in the past - last year in Japan at Coedo and recently with Kris Ketcham at Stone Brewing - Liberty Station, but never at our flagship brewery in Escondido. We have also known Logan Plant from Beavertown for a few years, have been to his brewery in London, and have been very impressed by the beers and his approach to brewing. We had been looking for just the right opportunity to brew with him. This recipe is a true representation of joining our three breweries with New Zealand hops, English yeast, and some American hops, plus our Stone style of brewing IPAs. This is a very unique and wonderful beer. Enjoy it while you can get it!

Tasting at Matt's
Cloudy golden-orange color. Very fruity and perfumy, mild residual sweetness, juicy hops, but there is some vegetable bitterness in the final.

Good DIPA, offering up discernible fruit notes without the adjuncts taking control of the beer. Yuzu and kiwi tartness stay mostly in the background, while tropical hop notes and a marmalade sweet center counter the resinous, pine forest back end. Pineapple, mango and lemon show up around the middle, and the habaneros wait until waaaay into the fade before releasing the mildest of capsaicin kick. Finish is black pepper and pine. Decent nose, mostly tart fruit and cereal grain, while the pour comes out a hazed yellow-gold with a decent head and mild lace. Perfect texture, smooth and oily with no hint of alcohol. Could honestly use a little more pepper heat; otherwise, a nice pint.

22 ounce bottle into tulip glass, bottled on 8/11/2017. Pours hazy deep golden amber/light orange color with a 1-2 finger fairly dense off white head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big lemon, lime, tangerine, peach, pineapple, apricot, grapefruit, kiwi, berry, passion fruit, melon, citrus zest, light habanero pepper/pine, white bread, herbal, and floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/fruity hops, yuzu, kiwi, pale malt, and light habanero pepper notes; with great strength. Taste of big lemon, lime, tangerine, peach, pineapple, apricot, grapefruit, kiwi, berry, passion fruit, melon, citrus zest, light habanero pepper/pine, white bread, herbal, and floral/grassy earthiness. Very mild pine/grassy bitterness and pepper spiciness on the finish. Lingering notes of lemon, lime, tangerine, peach, pineapple, apricot, grapefruit, kiwi, berry, passion fruit, melon, citrus zest, light habanero pepper/pine, white bread, and herbal/floral/grassy earthiness on the finish for a while. Great complexity, robustness, and balance of citrus/fruity hops, yuzu, kiwi, pale malt, and light habanero pepper flavors; with a great malt/bitter/spiciness balance, and zero cloying/astringent flavors after the finish. Slightly increasing dryness from bitter/spiciness. Medium carbonation and body; with a very smooth, moderately bready/grainy/sticky, and slightly creamy balanced mouthfeel that is great. Zero warming alcohol for 8%. Slight touch of increasing pepper heat through the glass. Overall this is an excellent fruited DIPA. All around great complexity, robustness, and balance of citrus/fruity hops, yuzu, kiwi, pale malt, and light habanero pepper flavors; very smooth and pretty refreshing to drink with the mildly bitter/spicy finish. Really well balanced between all flavors, and not aggressive at all for 80 IBU. Great juicy fruit/hop flavors; balanced pale malts, without being sweet/heavy feeling for the ABV. Only complaint is I was hoping for more pepper presence, but it was solid. Pretty similar to a NEIPA with the haze and mild bitterness. A very enjoyable offering.

Pours gold into a shaker. Bright white head with good retention recedes to hug rim. Orange, apricot and peach fuzz aromas. Sweet and soft Grand Marnier and bitter peel upfront turning to warming earthy resin in the lasting finish... no heat.

Bomber from Whole Foods. Pours a cloudy yellow color with a medium white head. A big citrus nose, certainly I can discern peppers and husky grains. Sweet, big tropical notes, a big juicy E Coast IPA core, mango, sweet oranges, the pepper is there and not hot but tropical. Quite nice. I like this, it is drinkable and flavorful.

22 oz bottle poured into a tulip. Aromas of citrus, floral, tropical fruit, hop oils, some alcohol. Tastes of citrus, floral notes, tropical fruit, pine, some bitter wheat, maybe a little pepper flesh. Medium body with a semi-dry and slightly warm, peppery finish. Habanero is pretty subtle, mostly in the finish.

Hazy, tan. On the nose, it's fresh and fruity. On the palate, it's a bit chewy, alcoholic and there's a fair bit of bitterness. The hops are really nice on the nose, but don't follow through so brightly on the palate, maybe because the malts and alcohol are more prominent. Habanero, though?

22 oz. bottle, pours an opaque cloudy golden with a small white head. Aroma brings out lots of citrus fruits, citrus skins, some pine, light spicy peppers, and biscuity malt. Flavour is nicely fruity, with lots of citrus stone fruits, kiwi, piney hops, and biscuity malt. No notice of the habanero. Nice sweetness from the fruits. Excellent.

Bomber from Cap Tap. Pours hazy gold with a slight white head. Aroma is light for me - seems a bit juicy. Med + body. Flavor is rather juicily tropical with an inclusion of strange citrus flavor (mixed yuzu and kiwi?) and barely detectable chili. And I could be fooling myself about the chili. To me it's almost harshly dry, yet the fruit is somewhat juicy, and bitter is not extreme but damn insistent. A pleasing change of pace. Especially as the chili builds up a bit.
