In 2019, The Wild Beer Co, and Firestone Walker Barrelworks once again pull two continents together or the uniquely imaginative Violet Underground Cross-Atlantic Wild Ale. To create this cuvee, we tapped into native Somerset Wild, a proprietary wild yeast used solely by Wild Beer Co. at their facility in England. Sunrise Raspberries and a youthful batch of Bretta Weisse were aged in French Oak Foeders. This aromatic concoction was then blended with a mystical fermentation of French candied violet petals and Somerset Wild Saison. The resulting potion is bursting with aromas of ripe fresh fruit and hints of botanical spice. All anchored together with an expressive native wild yeast. A quenching acidity and lively carbonation round out the collaboration. Sante!

Bottled 2/15/19. Clear yellow, unstable white head. Smell is fruity, tart, woody. Light body, but not thin, soft carbonation, slight pucker. Taste is tart, dry, but with a memory of sweetness. Lots of oak, subtle raspberry, some floral notes. Quite nice!

Bottle, 375ml corked. An unclear orange colored beer topped by a minimal sized white head. Fruity aroma with orange, apricot and some grass, along with a pleasant funky touch. It's full-bodied and lightly tart on the palate, with a flavor profile matching the aroma pretty well. Lightly funky, mostly fruity, and quite flowery. Less flowers in the aroma I think. Long finish. A very pleasant one, tasteful, balanced. 201230

Tap at Cap Hop. Pours translucent orange tinged gold with a slight white head. Aroma is definitely violets - with an undertone of tart pale fruits. Med body or so. Rather sweet/tart. Yet dry. Lightly, lightly bitter. Violets get lost in the liquid phase, but the after quaff is definitely violets. Certainly very approachable. The flavor suggests bugs from the air did the fermentation. Gets drier with time. I like it a lot. Note: Finally it brought Soir de Paris fragrance back to my mind!
