In 2019, The Wild Beer Co, and Firestone Walker Barrelworks once again pull two continents together or the uniquely imaginative Violet Underground Cross-Atlantic Wild Ale. To create this cuvee, we tapped into native Somerset Wild, a proprietary wild yeast used solely by Wild Beer Co. at their facility in England. Sunrise Raspberries and a youthful batch of Bretta Weisse were aged in French Oak Foeders. This aromatic concoction was then blended with a mystical fermentation of French candied violet petals and Somerset Wild Saison. The resulting potion is bursting with aromas of ripe fresh fruit and hints of botanical spice. All anchored together with an expressive native wild yeast. A quenching acidity and lively carbonation round out the collaboration. Sante!

375mL bottle, pours a cloudy golden with a small white head. Nose is intense, with notes of oak, paint thinner and booze. Flavour is funky, with stone fruits, oak, and super dry tartness on the finish. Unique and really interesting. Complex, but rather acetic on the finish. Really great.

375ml bottle pours out a cloudy light straw topped with a white head. Nose is sour berries some funky yeast and a nice barrel note. Taste is nice a fresh hitof berries tart pucker crisp. A very nice berry sour.

9th Nov 2015: bottle shared between three as we did ’The Rainbow Project 2015’. Poured a golden amber, slight haze to it, small head. Aroma of lavender, and sour fruits on a wet plank of oak. Taste wise I wanted to find Parma Violets and I think I forced myself to pick that up within the flavours, but it is a sourness that dominated the taste to be honest and sweetness is overpowered somewhat.

375ml bottle from Wild Beer online. Golden colour, white foam head and aroma of grains, zesty citrus, funky. Taste is sour tangy, grain, white wine, fruity zesty citrus, white currant, berries, with drying tannins. Sharp mouthfeel, medium bodied, soft to medium spritzy carbonation, very dry very sour finish. Very drinkable.

Bottle consumed at home. It pours clear bright orange with a small white head. The nose is fresh, sweet, juicy, fragrant, parma violets, sweet florals, sherbet, sour candy and grape juice. The taste is crisp, tart, good mouth-pucker, raspberry, sour blackberry, grape skin, violets, decent acidity, floral notes, granny smith apple skin and lemony sherbet with a dry finish. Medium body and fine, prickly carbonation. If anything there is a bit too much acidity. Its is pretty delicious nonetheless. Juicy, tart and fruity.

Bottle from Beer Gonzo webshop, Earlsdon, Coventry consumed at Isobels, Eardisley, Herefordshire, Friday 30th October 2015. Hazy lemony cheesecake colour in fact I mention that because it does look a little like a liquid lemon meringue or lemon cheesecake. Light sharpness with a touch of lemon sherbert on the nose, but in the mouth the raspberry shows with a soft sherberty yeasty funkmeister. Pretty good. A7 A4 T7 P4 Ov14 3.6

Bottle at home, 25th October 15. Pours with a slight gush. Looks good in the glass, nice head. Aroma is funky raspberry, tart, acidic. Taste is very tart, big Brett hit up front, raspberries on the finish. Pretty good

[9/24/15] Bottle sample at the pre-Borefts tasting at ABC Beers in Den Haag. Thanks everyone who shared bottles! Cloudy yellow. Lovely aroma, funky, lactic, fruity. Sour flavor, funky, lactic, fruity. Medium-bodied, lively carbonation. Really good.

Draft at IMBC 2015. Hazy golden yellow color, massive cream colored head with good retention and lacing. Floral perfumy aroma. Taste is softly sour lavender. Very nice.
