Coffee Mead aged in a bourbon barrel then in a Goose Island Bourbon County Stout barrel
The Inspiration:
We approached this mead with inspiration from the imperial stouts aged in bourbon barrels we love so much. These stouts have a small percentage of dark roasted barley that gives the burnt toasty flavors. But they also have a lot of malt background. We decided to see if we could approach a mead in the same way.
The Coffee:
We took a field trip to Chazzano Coffee Roasters in Ferndale, MI to meet with founder and coffee expert, Frank Lanzkron-Tamarazo. As usual, Frank pulled out all the stops and soon we had about a dozen french presses of different coffees roasted to different levels. We evaluated each one for a couple of hours until we had just the right combination. We eventually settled on a blend of 75% Nicaragua Maragogype Superior Las Segovias (French roast), and 25% Yemen Mocca San’ani (full city roast). The Honey:
We wanted the honey profile to be as rich and complex as the coffee we selected, so we eventually settled on a 50/50 blend of Wildflower and Buckwheat honey. Each was sourced in its raw form from beekeepers in Michigan.
The Barrels:
After fermentation, the mead was aged in a bourbon barrel. In October of 2011 our co-founder, Brad, drove his piece of junk car to Chicago to meet with the head of Goose Island’s barrel program. He returned with a coveted barrel (on the roof of his car) that was used to age their Bourbon County Stout. We then aged the coffee mead in this barrel until the summer of 2012.

Flaska från USA, 2022. Abv 16,8. Mörk rostbrun. Doftar askfat, cigarretfimp och kaffesump. Smaken bättre med kolaremmar, lite torkad frukt, cigg, kaffe, fat och lite konstiga oxidationstoner. Drar samtidigt något åt tapetklister. Nej, smakar något hälsovådligt.

375ml bottle thanks to Eric pours out brown with no head. Nose is is bourbon barrel vanilla roast coffee booze sweet honey. Taste is more of the nice bourbon barrel notes some wood and coffee plenty of sweet honey.

Tiny bubbly head dark ambery color. Aroma is slightly sweet and rich mineraly, oak, minerals, dark sugar, burnt caramel, coffee liquor, bark, raisins, booze, hints of honey. Taste is slightly rich and dry mineraly, dark sugar, coffee liquor, minerals, oak, burnt caramel, raisins, bark, grass, citrus peel, honey, booze. Slightly sweet and dry mineraly mouthfeel. Nice.

Bottle @ the peteing zoo. Pours a deep brown appearance with no head. Burnt roasty bourbon aroma with some apple notes. Goopy sweet, thick caramel apple, a bit smoky, sweet honey flavor. Kind of boozy. Interesting.

375 ml bottle thanks to _angst_! Sampled on November 19, 2013.Label state 14% ABV.Clear dark brown color, no head, some oily legs. Vinous, sweet, alcohol, coffee scent. Sweet, raisin, vanilla, alcohol taste. Coffee, also dry grainy aftertaste. Warming alcohol. Smooth mouthfeel, medium high bitterness. The coffee disturbs me, as do the too potent alcohol.

Bottle received in trade. Thank you rfraga7! Pours dark golden brown with no head worth mentioning. Smell is sweet with dark honey, charred wood, dark roast coffee, bourbon, hay, vanilla fudge, toffee, caramelized almonds, sherry, solvents and bees wax. Taste is sweet and tiny sour with caramel, bourbon, dark roast coffee, vanilla fudge, hay, dried pine needles, charred wood, lemon zest, sherry and alcohol. Mouthfeel is sticky sweet, round and medium to full bodied. Finish is sweet with dark roast coffee, sherry, bourbon, honey, dried pine needles and alcohol. Bottle thanks to Kyle! Pours a clear deep amber with no head whatsoever. Aroma has a good amount of coffee with a nice honey note and a hint of barrel underlying. Flavor starts with sweet honey and a bit of BCS with a nice growing coffee note that melds well with the BCS note.

Thanks to MeadMe for this one! It pours clear amber with some nice legginess along the inside of the glass. The aroma is sweet honey and then booze with a bit of earthiness around the edges. The taste has rich yummy coffee mixed with sweet honey nectar and then a modest degree of barrel booze notes. Solid mix that stays harmonious from beginning to end.
