Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this dark Farmstead® ale is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Clear dark brown beer, creamy irregular beige to brown head, little stable, non adhesive. Aroma: very spicy, some chlorine, fruity, red fruit jam, sourish. MF: ok carbon, medium body. Taste: bit sour, fruity, floral touch, more sourish, tannins, bit weird. Aftertaste: weird, soapy, unpleasant bitterness, grape peel, tannins.

Bottle, picked up at HF a year ago and carefully stored since. Pours deep murky chestnut with a medium tan head and nice lacing. Aroma is funky and not much else, Flavor is funky, fruity, a bit of lemon zest. Not much sweetness or bitterness, a bit of acidity. Does not drink like a dark saison for sure. Medium body, spritzy carbonation. Lovely as hell and highly drinkable. Pulls things back to their core and displays only what is necessary. Not complex by any means, but the notes it hits are all pitch perfect.

Bottle received in trade. Thank you bytemesis! Pours hazy reddish black with a huge frothy blackish beige head that leaves tons of sticky trace and lacing on the glass. Smell is malty, funky, tannic and tiny spicy with roasted malts, dark bread, barnyard, lemon juice, hay, dry soil, black pepper corns, moist wood, dried juniper berries, burnt caramel. Taste is sour, tiny bitter, funky and tannic with roasted malts, liquorice root, grape juice, moist wood, hay, dry soil, lemon juice, leather, barnyard, dark roast coffee, juniper berries, oxidized red wine and hints of caramel and pumpernickel bread. Mouthfeel is soft, dry, tart and light to medium bodied. Finish is sour and tannic with roasted malts, lemon juice, grape juice, hay, dry soil, barnyard, leather, red currants, dried juniper berries, pumpernickel bread and lemon zest. Very nice tannic and complex dark saison.

Bottle @ Armin’s house, courtesy of mattsciguy. Thanks! Pours a deep brown appearance with a light brown head. Somewhat minty / herbal, slightly roasty, chocolate, kind if juicy, pretty aroma. Twangy, lime, pineapple, tart fruity, somewhat roasty flavor. Strange but quite tasty.

750mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours deep dark brown / near-black with large beige / tan head. Aroma brings out subtle tangy notes, earth, and some musty farmhouse notes. Flavour brings out loads of tangy notes, dark musty farmhouse notes, and earth. Lightly citric and earthy on the finish. Nicely balanced with no jagged edges. Characterized mostly by earthy notes and lightly citric notes. Great stuff.

Bottle shared by Kyle, thanks! Pours a hazy near black with a brown head that lasts throughout the beer and laces slightly. Aroma has a good amount of light dark grains with sour fruits and a hint of funk. Flavor starts with dark grains that is balanced by a nice funkiness and has a light sour fruit tartness.
