Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this dark Farmstead® ale is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

Bottle, many thanks to Leighton! It pours cloudy darkest brown with a massive light tan head. The nose is earth, toast, caramel, candy, spice, light charcoal, copper and mild sourness. The taste is sour, tangy berry, roasted malt, charcoal, toast, tart granny smith apple, lemon, mustiness, light alcohol and vinous notes with a dry finish. Medium body, moderate carbonation and foamy mouth-feel. Not quite what I was expecting, but pretty tasty nonetheless.

Bottle at Monmouth Park tasting. Pours black with tan head. Nose and taste of farmhouse funk, sour funk, wild yeast, citrus and orange zest, cocoa and grass. Medium body.

Bottle - Raisin, cherry and yeast. Jet brown and a brown head. Currants and a sourness with some dark malts. Complex and difficult to describe.

Craft Clerkenwell Tasting. Thanks as always to Leighton for keeping us in Hill Farmstead. Opaque dark brown - red beer. Palate is light, dry and slightly crisp. Touch of cherry fruit with light malt cream and a little yeast bitterness. Dry finish. Fine, if a bit dry.

Bottle split at CBC tasting, big thanks to Leighton (and Nellie!), 26/06/13. Extremely dark mahogony brown with a good tan covering. Nose is sour/wild yeast, grass, tarte fruit, funk, barnyard. Taste comprises grass, bitter orange, more subdued sour/wild profile when constrasted with the aroma, lemon rind, farmyard, herbal notes, funk. Medium bodied, fine carbonation, dry finish. Decent saison which crosses over a little into the sour/wild bracket.

Bottle shared at CBC Clerkenwell - big thanks to Momma Smith for picking this up and to Sister Nellie for bringing it to London (via Cluj, Romania). Pours rich brown with a thick, frothy beige head; it looks perfect, basically. Lovely leathery funk in the nose, some tangy berries and, as the beer warms, notes of bread come through. Light sweet flavor with a dominant dry leather character, light wood, some dried fruits, good funk, bitter berry pits. Light to medium bodied with average, massaging carbonation; typically stunning HF mouthfeel. Funky finish, lightly dry, with more leathery berries, some bitter lemon rind, faint dry dark bread. Lovely.

750 ml bottle from the brewery. Served at cellar temp. Pitch black color in a snifter, small tan head. Nose is Belgian yeast, funky musty basement. Flavors of tart citrus, sour oak, sour grapes and roasted barely notes. It does have a good amount of complex flavors however, I haven’t really had a “Black Saison” that I really enjoyed. This is no different. The roasted malt and barely just throw the saison off for me. Nothing against this brew, the style I just don’t tend to enjoy much.

This brew pours a dark brownish color with a medium foamy light beige head that diminishes slowly. Patchy lacing on the glass. Aroma of roast malt, tangerines and grassy yeast. Light to medium body with flavors of herbal yeast, mildly tart apples and toasted malt. The finish is both roasty and sweet and tart and fruity at the same time and it works. Very enjoyable beer overall.

2013 Bottle, blue label 75CL format enjoyed in the new charcoal Hill Farmstead Stemware at 62 Degrees F on the first 70 Degree + day here in central New Hampshire.

A - Thank goodness this wasn’t a gusher! Pours a toasted black out of the bottle. Dark brown to black in the glass, 1 finger leathery head with a creamy top. Very persistent lacing

S - This is a hard one to place. There is a lot going on, I get faint cherries, a smudge like almost nonexistent level of roasted barley. There’s a nice level of lactic acid nose creating a tartness and a level of floral like rose petals as well.

T - Wow. This is incredibly interesting. The terroir of Hill Farmstead’s Water, Yeast and Oak process that is similar to Sean’s other bottled farmhouse style ales is apparent. It’s a profile I love a lot so I’mg lad to see it so present in Edith. In addition, there is a minor roast / smokiness, navel juiciness and crisp tart finish that’s really nice. In the middle is a sweet grape taste. It’s complex and just enough "black" to make it stand out from arthur yet shares a lot of the same similarities.

M - Very full body on the mouth swish. Tart and dry finish. Medium in body

O - As I said in the taste notes, it reminds me of the 2 most recent batches of Arthur but with additional bitterness and roastiness that you’d expect from a black saison. Very different from Civil Disobedience 4. A delicious beer that I’m glad there are more in the cellar.
