A Belgian Style Quadrupel Ale Brewerd with Triticale Grain

Trappist ales as we know them have a proud lineage dating back nearly a century. Rather than follow the footsteps of the monks who forged the quadrupel—the warmest and darkest of monastery offerings—we aimed to test its inherent makeup. In doing so, we added triticale, a hybrid grain combining the pleasant flavor of wheat with the elemental durability and spice of rye, to breathe new life into the malt bill. Because of this, this reimagined brew comes across differently than its classic Belgian predecessors, and beautifully so. Lower in sweetness, but rich with flavors mirroring dried fruit, it’s a modern interpretation of one of the most historically sacred styles on Earth.

The Star Trek geek in me inspired this beer. The classic episode, “The Trouble with Tribbles,” referenced a type of grain called quadrotriticale (pronounced "quádro-trítĭ-kay-lee"). As described in the episode, this was a high-yield, four-lobed grain hybrid of wheat and rye with a bluish color. The flaked triticale we used is a cross between rye and wheat and makes up about 10 percent of the grain bill in this Belgian-style quadrupel.

On tap @ Stone Berlin. Smooth fruity beginning. Honey like smoothness, round and caramelly. Dark-sweetish, burned caramel, floral hops, fantastic smooth and round and dark-sweetish. Great.

bottle, rating from 2016 - Deep amber pour. It smells of malt, Belgian yeast, and dark fruit. The flavor is sweet though not as sweet as many quads. There's caramel, dark fruit, and spice. It's full bodied yet easy to drink, an enjoyable beer though not great for Stone.

Vom Fass Stone Brewing Berlin im 2016-07 getrunken. Auch dieses hier konnte sich diesmal steigern. Leider wird es zu kalt serviert, so daß man hier +30 Minuten warten muß oder ein anderes Bier vorher trinkt. Kommt dieses erstmal auf die richtige Temperatur kann es mit seinen Aroma und am Gaumen mit einen echten belgischen Schwergewicht in der Ring steigen. Klasse!

Tap. Pours clear reddish Amber, small beige head, good lacing. Aroma is toffee, tea, dates, caramel, rye, light spiciness. Flavor is light plus sweet, light bitter, tea and dark sugar notes prominent. Medium body. Interesting.

4 oz pour on draft at Spacebar. Clear dark amber with beige head. Aromas of dark fruit, caramel, toffee, malt. Tastes of dark fruit, figs, light spice and caramel. Medium body with a dry finish.

Tap@Copenhagen Beer Celebration 2016, Copenhagen - dark amber coloured pour with beige head. Medium sweet malty aroma and taste, toasty, caramel, toffee, brown sugar, dried fruit, some spices on the palate, medium sweet bitter finish.

Sampled at CBC 2016 - second day. A solid quad, with notes of caramel, dried fruit and a bit of yeast spiciness, I think.

Tap @CBC16. Cloudy amber, small beige head. Woody, boozy aroma and flavour. Caramel and dried fruit. Allcohol gets rough.
