A Belgian Style Quadrupel Ale Brewerd with Triticale Grain

Trappist ales as we know them have a proud lineage dating back nearly a century. Rather than follow the footsteps of the monks who forged the quadrupel—the warmest and darkest of monastery offerings—we aimed to test its inherent makeup. In doing so, we added triticale, a hybrid grain combining the pleasant flavor of wheat with the elemental durability and spice of rye, to breathe new life into the malt bill. Because of this, this reimagined brew comes across differently than its classic Belgian predecessors, and beautifully so. Lower in sweetness, but rich with flavors mirroring dried fruit, it’s a modern interpretation of one of the most historically sacred styles on Earth.

The Star Trek geek in me inspired this beer. The classic episode, “The Trouble with Tribbles,” referenced a type of grain called quadrotriticale (pronounced "quádro-trítĭ-kay-lee"). As described in the episode, this was a high-yield, four-lobed grain hybrid of wheat and rye with a bluish color. The flaked triticale we used is a cross between rye and wheat and makes up about 10 percent of the grain bill in this Belgian-style quadrupel.

Tap@ CBC 2016. Pours amber, clear, thin off white head. Bready sweetaroma, dark fruits. Bready sweet, with some plummy notes. Long finish. Warming.

Tap at CBC2016, Copenhagen. Colour is clear dark orange with small white head. Aromas and flavors: Deep dry fruits, raisins and malts.

An amber beer with a beige head. The aroma has notes of straw and caramel. The flavor is sweet with notes of malt, and caramel, leading to a dry finish.

From tap. Pours clear and golden orange to brown with a small off white head. Aroma is toasted malty and caramelish. Lighht phenolic snd toasted malty. Lingering dark malty.

650 ml bottle. Color is deep ruby without any head in the snifter. Aroma is slight Belgian yeast with moderate dark fruits, bold caramelized sugars.

The flavor is almost like a Quad. Caramelized sugar and dark fruit is here. What bothers me most is the texture and body. The body is strangely thin with a syrupy texture over the tongue. I enjoy the style but this just isn’t working for me. Cloying

Bottle @ Zaklad, Wroclaw. Nice head with good duration. Color is dark amber. Aroma and taste are rich dried fruit, candy sugar, malt, hops and fruits. Nice and sweet.

Bottle @ Zakład Usług Piwnych. Clear reddish amber with a small off-white head. Aroma is sweet, malty, caramel and dried fruit. Flavor is quite sweet and rather bitter. Dry and rather bitter finish with warming alcohol. 290715
