A Belgian Style Quadrupel Ale Brewerd with Triticale Grain
Trappist ales as we know them have a proud lineage dating back nearly a century. Rather than follow the footsteps of the monks who forged the quadrupel—the warmest and darkest of monastery offerings—we aimed to test its inherent makeup. In doing so, we added triticale, a hybrid grain combining the pleasant flavor of wheat with the elemental durability and spice of rye, to breathe new life into the malt bill. Because of this, this reimagined brew comes across differently than its classic Belgian predecessors, and beautifully so. Lower in sweetness, but rich with flavors mirroring dried fruit, it’s a modern interpretation of one of the most historically sacred styles on Earth.
The Star Trek geek in me inspired this beer. The classic episode, “The Trouble with Tribbles,” referenced a type of grain called quadrotriticale (pronounced "quádro-trítĭ-kay-lee"). As described in the episode, this was a high-yield, four-lobed grain hybrid of wheat and rye with a bluish color. The flaked triticale we used is a cross between rye and wheat and makes up about 10 percent of the grain bill in this Belgian-style quadrupel.

Bottle. Pours a clear amber color with a small off-white head. Has a fruity malty spicy dark fruit and caramel aroma. Sweetish malty spicy caramel flavor with hints of dark fruit. Has a sweetish malty spicy caramel finish.

Light haze on this deep red - amber beer, good pale cream colour head. Palate is light and semi dry with modest fine carbonation. Smooth malts, mildly sweet and with a dankness and spice that reminded me of the historical Chevallier malt used in Poppylands Days of Empire (but that was a better beer). Little creamy caramel, touch of paper. Smooth semi dry finish brings a touch of tired tasting dried fruits. An okay showcase for this malt, but it really needs something else going on to lift it, as it stands it’s flirting with blandness.

Deep, clear copper color, small-ish head.
Sweet aroma of brown sugar, syrup, figs and dried fruit.
Taste is sweet and has notes of brown sugar, dried fruit and syrup. The finish is surprisingly hoppy and bitter.

Sampled from a 22 oz brown bottle this beer poured an orange-brown color with tiny floaters and a medium sized fluffy orange-tan head that lingered and left a bit of lacing. The aroma was treacle, molasses, honey, caramel, dark fruits and had a yeasty note. The flavor was bitter and bitey with noted alcohol, dark fruits, bread, toffee, treacle and yeast. Long finish. Moderate full bodied. Somewhat disappointing.

Bomber courtesy of rlgk. Pours clear amber with a small offwhite head that doesn’t leave much trace while dissipating. Smell is malty, slightly spicy and slightly floral with bread, cereal, caramel, prunes, pears, hay, lemon peal and hints of alcohol. Taste is sweet, tiny bitter, slightly fruity, tiny floral, slightly spicy and slightly grainy with bread, oatmeal, cereal, caramel, pears, hay, dry soil, minerals, alcohol and lemon zest. Mouthfeel is soft, round, tiny boozy and medium bodied. Finish is slightly sweet and slightly bitter with bread, oatmeal, cereal, pears, hay, minerals, alcohol and lemon zest. Not a huge fan...

Bottled from Systembolaget. Hazy copper colour, mid sized head. Caramelly nose. Mid sweet with medium body and rounded, elastic mouthfeel. Caramel, marzipan, grass. Mid bitter finish. Very American, in a positive way.

Keg at Brewdog Shepherd’s Bush, London. A mahogany coloured pour with a medium off white head on top. Sweet, dark fruit, molasses aroma. Tastes similar, slightly sweet, caramel, molasses, dark fruit, some treacle and dark honey. This grew on me as I was drinking it.

Pours dark reddish brown color with tan head. Aromas of dark fruits, sugar, and yeast. Raisin and fig flavors with some toffee, dough, and candi sugar. Medium to full body with moderate carbonation.

Keg at Brewdog Camden. Nice crimson reddy amber / orange coloured pour with a lasting off white head. Aroma is burnt toffee, sugar and some orange Peel, flavour is composed of very sweet honey and caramel. Palate is semi sweet , sugary with lowish carbonation. A bit sweet and sticky . earthy honey and maple syrup .
