A Belgian Style Quadrupel Ale Brewerd with Triticale Grain
Trappist ales as we know them have a proud lineage dating back nearly a century. Rather than follow the footsteps of the monks who forged the quadrupel—the warmest and darkest of monastery offerings—we aimed to test its inherent makeup. In doing so, we added triticale, a hybrid grain combining the pleasant flavor of wheat with the elemental durability and spice of rye, to breathe new life into the malt bill. Because of this, this reimagined brew comes across differently than its classic Belgian predecessors, and beautifully so. Lower in sweetness, but rich with flavors mirroring dried fruit, it’s a modern interpretation of one of the most historically sacred styles on Earth.
The Star Trek geek in me inspired this beer. The classic episode, “The Trouble with Tribbles,” referenced a type of grain called quadrotriticale (pronounced "quádro-trítĭ-kay-lee"). As described in the episode, this was a high-yield, four-lobed grain hybrid of wheat and rye with a bluish color. The flaked triticale we used is a cross between rye and wheat and makes up about 10 percent of the grain bill in this Belgian-style quadrupel.

Bottle at the Dirty Old Socks Tasting, Den Haag, December 2014. Poured a clear dark amber with a round white head. The aroma is sweet sticky caramel malt. The flavour is moderate sweet with a sweet malt, yeast alcoholic bitter palate. Medium bodied with soft carbonation. Stone needs to stick to the IPA’s.

Bottle shared at DOS tasting. Pours clear brown with a ring off white head. Aroma of malt, caramel, really not much more going on, very one dimensional. Flavour is light heavy sweet and light moderate bitter. Medium bodied with soft carbobation.

Flaska delad med Frode, tack kompis! Kopparröd vätska med lågt skum. Diskreta dofter av russin och dadlar samt lite jäst. Lätt sötma och en ganska framträdande beska. Det är min fasta övertygelse att jänkarna inte skall försöka efterapa belgarna. Denna dryck är ett tydligt bevis på detta.

A clear brown ale with a thin off white head. In aroma, sweet candy sugar with light coriander and curacao, alcohol warmth, nice. In mouth, a sweet fruity candy sugar with dark fruits, plums, licorice and curacao, alcohol warmth, well done. On tap at WOB Charlotte.

On tap at Granite State on tap. Dark brown color, big raisiny dried fruity flavors sweet fruity maltiness with a hint of alcohol and bready grain. Interesting brew, a bit of cereal graininess but a serviceable sipper.

650 ml bottle. Pours a mahogany color with light to moderate head of big bubbles. Aromas of raisins, spice, gingerbread and sweet malts. Flavors are similar with additional cloves and sweet dark fruit. Nice

22 oz. bottle. Pours clear, light brown, with a small, creamy head, and thick lacing. The aroma is caramel, light rye, syrup, and some earthy notes. Very sweet, with a touch of hop bitterness in the finish. Medium body, clean, and smooth. Overall, this is a nice, sweet beer, and it showcases the special malt very nicely. Not a great example of the Quad style, but a solid beer.
