My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

Bottle sampled @ Ekstedts tasting on December 2. Courtesy of Ekstedt. Pours light golden with a thick white head. Smell is sweet with lemongrass, lemon zest and allspice. Taste is sweet with coriander, allspice and bubblegum. Finish is sweet and spicy. Bit too sweet.

Bottle at ekstedt tasting on December 2, 201175 clHazy yellow color, white head. Spicy,s weet, alcohol scent. Sweet, fruity, alcohol taste. Sugary aftertaste. Moussy mouthfeel, low bitterness.

Refrigerated bottle poured into a weizen glass. Pours clear golden with big white fluffy head. Highly carbonated, medium body, and thin texture. Taste acidic citrus malt, sour, and a hint of spice.

(Draught at Pikkulintu, 20111113) The beer poured golden and hazy. Its head was medium sized, dense and white, and it disappeared quickly. Aroma had coriander, citricness, hops and fruitiness. Palate was medium bodied with medium carbonation. Flavours were spices, coriander, hops, saltiness, fruitiness, sweetness and quite low bitterness. Aftertaste was spicy and bitter. Very spicy for a wit but not a bad beer.

Pours dark yellow with a huge foamy head that disappears quickly. Aroma has notes of fruits, orange, citrus, spices, hops and coriander. Taste is quite fruity and malty with some notes of orange and citrusy hops. Smooth, full bodied and fruity finish. Nice fruity and hoppy wit done the American way.

750ml. bottle Purchased @ Carl’s Meat market, Kittery, ME. $10.99. Cloudy yellow with fluffy head that floats on top. Flavor of sage, spices, pepper, pale malts, wheat and lemon. Medium-bodied, with a spicy, tingly mouthfeel. Very dry finish. This was a big letdown after the last Stillwater I drank. For the money I could get a much better brew. I think the combo of spices turns me off. Meh.

Bomber. Ginger and spice nose, warm wheat. Very spicy, interesting, sage, too much herbs. Orange and cloudy with lace. Big, sweet, fruity and herbal flavor with sage, herbal bitterness, also a tart edge and a bit of banana. Nice fruit. Finish is a bit dull. Interesting.

Wit? - more like a saison - hugely carbonated, fizzy pour - hazy golden - dry aroma and dusty yeast, strong sage, toasted wheat, wildflowers, mild phenols - dry up front, with strong wheat, moderate phenols - a little sweet on the tail end - sage, peppery character, orange and other citrus - cobweb - chewy yeast - good, but a bit too sweet on the end for my taste.

Bottle courtesy of Brandon. Thanks! Cloudy orange appearance with a big, fluffy white head. Floral, citrusy, slightly spicy, slightly yeasty, wheat malty nose. Floral, herby, slightly spicy, light wheat malty, a touch tart flavor. Pretty tasty, interesting beer.

A hazed golden wit with a thin white head. In aroma, nice fruity esters, peaches, light lactic and creamu notes. In mouth, a smooth saison like offering, fruity , chalky noes, medium bodied. On tap at Delirium Café Hoppy Loft, July 13 2011.
