My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

750 mL bottle. Pours a clear, pale yellow color with a thick white head and no lacing. The aroma is lemons, green apples, hay, and a lot of yeasty funk. The flavor is fruity sweetness up front and through the middle, with a little bitterness and sourness in the finish. The palate is light, crisp, acidic, and clean through the finish. Overall, this is a wonderfully crafted and subtle beer. Very light and drinkable, yet complex.

Hazy golden with a large white head. Lightly spiced aroma, yeast, a bit of hops, and light fruits. Sweet fruits, light spices, a bit of wheat, a bit of citrus, and floral. Medium, carbonated body. Pretty fun brew but not an everyday drinker.

Bottle from summer secret santa 2011 (ragesaq). Pours cloudy pale golden color with big white head. Floral and perfumey hops and herbal aroma with doughy yeast. Light doughy flavor with lots of citrus and herbal notes. Very earthy and a little peppery. Light to medium body with lively carbonation. Thanks Aaron.

At ACBF 2011. Pale gold, coludy. Saisony aroma. Some lemon, touch of peachy soap. Touch too soapy maybe. Good dryness though.

June 2023 rating. On tap at Portland Craft, pours a cloudy yellowish blonde with a small white head. Nose has clove, banana esters, and some rustic saison yeast — doesn't smell very saison-y. Flavour is gently bitter, with rustic saison yeast, tons of esters, banana, and a touch of clove a la hefs. Not anywhere close to as good as I recall. 6 3 6 3 12 July 2011 rating. Sampled from bottle at PIB, pours hazy / murky yellow with a small white head. Aroma of barnyard funk, sort of a pot-like quality, lemon zest and dry-like character. Flavour is very dry fruits, lemon zest, yeast, with a dry palate and a funky / yeasty finish. Wonderful saison. 8 4 8 4 15

draft@Delirium Hoppy Loft: very hazy yellow beer with white head, lots of citrus hops in the nose but also some spices, sweet & fruity with lots of bittering citrus hop & some sweet apricots, complete hop bomb, decent amount of yeast & some minor spice, very different from Belgian saison’s in my opinion but definitely great stuff, dry finish

Draught at Københavnske Øldage 2011. Cloudy golden, small head. Fruity sage aroma. Sweet and fruity, above medium bodied with rounded mouthfeel. Some syrup and green apples. Low bitterness. Quite American in its approach.

Keg at Craft Beer Co. It pours light straw yellow, with a very thick, foamy white head. The nose is ginger, zesty lemon, hay and white bread. The taste is hay, grass, lemon, grapefruit, fiery ginger, pepper, herbal, metal, white bread and butter, with a bitter-dry finish. A decent enough saison, but doesn’t stand out from the crowd.
