My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

CPH BF 2011. Golden colour, small head. Aroma is sweet fruits, some mild soapy notes along with mild yeast, earth and herbs. Flavour is quite similar. Good attempt, but I felt this was a bit too clean and fruity to be really nice.

Unclear golden with a white head. Aroma is sweet, malty, fruity, yeasty and light spicy - ginger. Flavor is quite sweet and light bitter. Sweet finish. 260511

Bottle shared by a generous person on RBSG bus. Pours lemon gold with white head. Nose/taste of lemon zest, yeast, coriander, spice, orange peel and herbs de provence.

Bottle at Patricks. Golden- orange colour with a white head. Aroma is fruit, yeast, citrus, citrus, lemon, hop. Flavour is fruit, yeast, citrus, lemon, sugar, perfume, tropical fruit. Medium body. Nice beer.

Creamy white good mostly lasting head. Yellow colour. Light malty and heavy hoppy aroma. Moderate bitter flavor. Long moderate bitter finish. Oily palate. Sample at CBC: 7-3-7-3-15=3.5 My rating stands!

On tap @ Beer Temple. Pale golden color, clear. White head. Perfumy, fruity aroma’s, with spices (anis/coriander/sage). Flavor is a bit of everyhting, sweet, bitter, some acidity. Bit spicy bitterish finish. OK.

Sample @ CBF. Nice head with good duration. Color is golden. Aroma and taste are lavender, hops, fruits and malt.

On tap at Beer Temple. Slightly hazy golden colour, white head. Aroma of spices, cardamon, citrus, sweet, light herbal. Flavour is spicy, citrus and cardamon, sweet, light flowery, spicy light bitter finish. Light bodied. Bit cloying.

Draft @ Mikkeller Bar, Copenhagen. Pours a slightly hazy yellow orange color with a small white head. Has a fruity yeasty malty citrus aroma. Fruity malty yeasty spicy citrus flavor. Has a fruity malty spicy yeasty citrus finish.
