My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

Pours deep gold into a tulip. Off-white head with medium retention recedes to skim surface. Citrus and wheat aromas. Dry and crisp with upfront sweet lemon turning to a tropical fruit finish.

Re-rate 5/4/13: Draught at Copenhagen Beer Celebration 2013. Cloudy yellow. Aroma of wheat, yeast, fruits and sage. Spicy flavor with sage, yeast, fruits, floral notes and spicy finish. Medium-bodied. 7/3/6/3/13=3.2

[3/4/11] Bottle at ACBF 2011. Cloudy yellow-orange. Aroma of yeast, fruits and citric hops. Sweetish yeasty fruity flavor with some grainy notes, continues to a dry hoppy finish. Medium-bodied. 7/3/7/3/14=3.4

750 ml bottle sent to me by suttree. Pour a is hazed golden, with a well formed two inch white head. Falls loosely with lacing. Aroma is bright lemon peel, some floral sage and white peppercorn. Taste is soft wheat maltiness, the sage floral herbal of the nose, and a hint of citrus - really clean finish. Palate is medium bodied, crisp mineral dry finish. Nice one, thanks Phil!

Alvinne Craft Beer Festival (ACBF) 2011, De Kasteelhoeve, Doorniksesteenweg 314, Outrijve (Avelgem), Belgium.Hazy - murky medium yellow orange color with a small to average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, toasted, spicy, herbs, sage - rosemary. Flavor is moderate to heavy sweet and light to moderate bitter with a average to long duration, spicy - herby. Body is medium, texture is oily, carbonation is soft. [20110304]

75 cL bottle at ACBF2011. Pours hazy yellow with no head. Aroma is spiced and slight herbal to slight ginger. Spiced, yeasty and slight citrusy. Bitter and spiced. Spiced and dry yeasty.

On tap at Mekong on 11/11/2010. Hazy orange body with a small creamy white head. Sweet spicy herbal aroma with chamomile. Sweet spicy and herbal flavor with chamomile and citrus. Medium body with moderately high carbonation.

Pear and lemon nose, with a fair amount of funk. Opaque amber, medium head. Delightful citrus punch, orange and lime, funk at midpalate. Finishes with rosemary and lime zest. Moderate strength, not overstated. I’m 2 for 2 with Stillwater and have yet to be disappointed. Outstanding brewer!

Prairie Moon (?), Evantston, IL tap ($7): Pours a pale, slightly cloudy color with a white head. Aroma is, to the surprise of no one, full of spices, citrus, and yeast. I didn’t notice the sage right off the bat, but with enough effort you can find it. I noticed something akin to lemongrass in there, but reading the description that might be from the combination of hops. The taste is very smooth (and unfortunately, I got mine in a really small glass, so there wasn’t that much to relish), with sufficient hops to give this beer and American character, but still maintain the lightness of the saison style. Tons of different spices and flowers become evident from every given sip. And of course, my favorite part of a beer, the yeast.

Bottle @ Seabass going away party, Jan15th ’11. Courtesy of Hopscotch. Une des nouvelles brasseries montantes aux US.. Dorée avec un léger trouble, blanche. Superbe au nez, allant à la fois vers un côté épicé et herbes tirant sur des notes de levure. Des fruits citronnés donnent au nez une bonne touche d’agrume avec une douceur d’orange ainsi que de plante de sauge. Au palais, on ressent bien la sauge qui laisse en bouche un aspect de thé. Un peu de citron aussi présent pour une bière qui reste bien réalisée. Parmi cette fine amertume on peut aussi y noter de la pelure de mandarine, malt pale tout en conservant une levure de saison.

Capped 750 from Monument in Concord, CA. Pours hazy light gold with a foamy near white head. Lots of floral aroma with a light bit of sage. Kinda earthy, not quite barnyard. Definitely saison. Medium body with kicky carbonation. Flavor is most definitely sage, with something like orange, and something that qualifies as mild barnyard. Works very well. Tasty as anything. Great.
