My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

Pours gold with a small head.Nose shows lemon, musk sticks, bergamot, confectionery notes, soft peppery phenols.Flavours include more of the herbal characters, some soft acidity, a bit of sweet doughy wheat notes.

From tap. Hazy yellow color with white head. Funky yeasty aroma, spicy, herbal, citrusy fruity. Sweet and light bitter taste, funky and light fruity. Medium oily body with soft carbonation.

On tap @Ma che siete venuti a fà (Rome). Pours cloudy yellow with a little head. Aroma is spiced, with citrus notes, malt, more similar to a saison. Flavour is rich and complex, just a bit messy, malt, grain, fruits, yeasts. Mmedium body, good carbonation. Nice beer, it could be a world class if it was a little more refined.

355ml bottle from Tanakaya. Poured into a Duvel tulip glass. Slightly hazy golden color with a modest amount of foam that dissipates fairly quickly. Big fruit aromas up front: papaya, passion fruit, citrus along with hints of corriander, cinnamon and barnyard/brett. As it warms up the brett and barnyard flavors take over in a good way. Medium body with a slightly oily texture. Lively carbonation and a nice finish that is mostly bitter with a hint of sourness. It’s like a saison and witbier all wrapped up together.

Poured from bottle into teku glass. Pours honey yellow and translucent with a sparse white foam head. The nose shows mostly honey, herbs, and some slight hints of citrus fruits with the distinct barnyard/farmhouse aroma. The palate is medium bodied. The first impressions shows mostly spices and herbs along with the bitterness that follows for some of those herbs (not from the hops). The farmyard flavor tends play a role in the background of these spices. The finish shows very faint hints of malts but the mid-palate shows a spiciness that tends to last too long afterwards. Not many fruit flavors just a lot of the spices and herbs that take center stage making it somewhat difficult to approach.
