My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

Very unclear pale yellow color with a big fine white head. Nice lacing down the glass. Nice unusual aroma. Yeast, mild citric, spruce, some spices and wheat. Fine body. Ok balance between sweetness and bitterness. High carbonation. Still very pleasant to drink although the high carbonation. Citric, fruity, some spices, spruce and some yeast. Nice tasty ale.

Tap at CBC 2014. Beer in the glass deep golden, small head. Mild fruity aroma. Starts malty, spicy, notes of some herbs, mild sweetish. Finish more dry, a bit yeasty. Fruity like peach. Okay.

Keg at the Copenhagen Beer Celebration 2014, yellow session. 02/05/2014. pale golden coloured pour with a thin fleeting white head. Aroma is wit yeast esters, orange, light straw earthyness. Flavour is crisp, yeasty, straw and grainy malts. Some orange fruits lingers. Didn;t get much sage. Palate is wheat, moderately high carbonation.

Bottle pour. Pours light golden with a nice Belgian like aroma. Solid Belgian white ale. Really nice spicy citrus flavors. Orange spice finish, but mild overall. Good beer.

Bottle. Light golden body with a frothy white head. Aroma of juniper, toasted grain, hibiscus, spice, leafy hops, herbs, coriander, sage. The flavor is moderately sweet and lightly bitter. It finishes lightly to moderately sweet, lightly to moderately bitter and lightly to moderately acidic. Medium body, watery texture, lively carbonation. Way too much going on in this beer in the flavor, especially with the spices, that aren’t working together. Drinkable but not especially enjoyable. The aroma was nice and the barrel-aged version a lot nicer.

Small coarseish white head. Hazy yellow body. Spicy orangey white sage aroma with mealy herbal notes. Dryish spicy orangey white sage taste with mealy herbal notes. So basically, taste is identical to aroma. Mid-bodied. Mild, mealy, flattish mouthfeel. Dryish mealy wooden white sage aftertaste with spicy fruity notes. Nice, drinkable, unusual and really showcases the white sage (which is really recognizable from Nøgne Ø’s Special Holiday Ale), but perhaps a bit flat and lacking in complexity. (0.355l bottle, from wine monopoly, Vika, Oslo.)

Bottle. Pours hazy golden with a small head. Aroma is nice peppery yeast with lots of fruity peaches, as well as roasted malts and kandi. Medium body with soft carbonation. Flavour is tart with earthy yeast, kandi and some spices. Nice lingering yeast in the finish.
