Le fait de remplacer 20% du malt par des invendus de pain frais donne à la bière un côté caramel / toast agréable au palet. Solidement dry-hoppée au Chinook, elle a une amertume qui n’a pas froid aux yeux. La plus amère de nos All-Stars.
Avec Babylone, c’est « Back to the future » ! Voilà 7,000 ans, à Babylone, on se chopinait un breuvage à base de pain fermenté. Quelques millénaires plus tard, à Bruxelles, on a décidé de se lancer dans ce projet d’économie circulaire, en recyclant des invendus dans pain frais dans la recette.

0.33 l bottle shared with Ogi, thanks! Hazy copper, small off-white head. Moderately hoppy, ripe fruit, malts, caramel, tart fruit, some spice. A touch of toast, a touch of alcohol. Some maltiness, some tartness, good balance. Medium body, soft texture. Flavour is fruity, hoppy, malty, fairly spicy. Light finish.

Backlog October 2015. Clear amber body under a big, creamy off-white head. Aroma has toast, rotten fruit, wood and cheese. Taste is strange and unpleasant dominated by overripe/rotten fruit and smelly cheese. Medium body with same unpleasant aftertaste. Probably something wrong with this bottle.

Bottle, 7%. I thought he said Brett IPA in the bottle shop, but apparently it was bread IPA. Perfumy and citric aroma. Cloudy amber colour. Big stable rocky off-white head. The flavour starts off with a fairly but and fruity hop note and finished on a quite caramelly one. Hop note, that is.

33 cl bottle. A dark ocher, even grizzly brown pour with a long-persisting, foamy, beige head. Aroma is garden rocket, earth and grapefruit. Dry mouth, light-bodied, very bitter and very long-lingering finish. Aftertaste is earth again, and coffee. Quite interesting.

(Bottle) Amber colour with big, lasting, off-white head. Malty, fruity nose with orange marmalade, bread, caramel, dried apricots, resin, brown sugar and hints of ripe banana. Malty, fruity taste with notes of rye bread, caramel, orange marmalade, resin, grapefruit, brown sugar and a balanced citric, resiny bitterness in the finish. Medium body, mainly dry. Tasty and well balanced. Nice one.
