Faire un bon chouchenn est un art délicat où chaque ingrédient a une grande importance. Il faut une eau de source d’une grande pureté, bien choisir les miels qui lui donneront sa typicité : Châtaigner, Ronce, Tilleul, Trèfle Blanc, mais surtout le sarrasin. Un miel au goût très particulier qui donne toute son originalité au chouchenn produit en Bretagne.
Six mois de fermentation, puis un vieillissement d’un an en fûts de chêne seront nécessaires avant l’embouteillage. Le Chamillard titre à 13,5° ce qui en fait un apéritif à boire bien frais : entre 6 et 8°C.
Le Chamillard vieillit très bien, 15 ans d’age ne lu font pas peur. Il acquiert rondeur et une belle robe ambrée. Il se marie à de nombreux mets, accompagne merveilleusement le melon, les desserts et rentre dans de nombreuses recettes des plus grands chefs Bretons.

Bottle at THT February. Clear golden with no head. Honey, boozy, soft citrus, sour candy, flowery, soft herbs. Medium sweet, light tart and bitter. Full bodied.

Bottle from summer in Bretagne sud. Clear golden with no head. Sweet and tart honey, some orange peel marmalade fruitiness, some cookie spices, cardemom, beeswax. Quite sweet And fruity with some distant tartness. Medium body and no carbonation. Nice and pure.

75 cl bottle witgh a sticker stating "2008", label reads 12.5% abv. Sampled on February 14, 2014.Clear deep golden color, no head, no legs. Sweet, honey, some alcohol scent. Sweet, some raisin and berries, honey taste. Fairly smooth mouthfeel, medium dry finish with some peppry notes to the tongue.

Bottled. A dark golden mead. The aroma is dominated by honey. The flavor is sweet with notes of honey and pollen as well as lighter notes of spices. Thanks fiulijn for sharing.

75 cL clear bottle, courtesy of fiulijn. Pours clear and golden orange with no head. Aroma is herbal honey, pollen and floral. Sweet honey flavoured, light detergent note. Goes rather dry honey herbal into a phenolic finish.

It pours a beautiful golden color, still. The honey aroma is flowery and soapy. Sweet mead, with strong honey flavor; the mouthfeel becomes a bit astringent (tannic) in the end; this soft feeling may be due to the ageing in casks. Hints of alcohol in the end. Straight-forward sweet French Mead, highly drinkable even if not impressive.
