Schieven Enthusiasm is a collaboration with our friend (and former intern) Doug Checknita of brewery Blind Enthusiam in Edmonton, Alberta, CA.
She turned out a strong version of a farmhouse ale, with no less than 10% alcohol! Aged in barrels for over a year with our Brettanomyces yeasts, her nose reminds us of saisons. We get fallen apples, a fleeting acidity, quince confit and the funkiness of the Brett yeast. In the mouth, she develops a certain softness. This comes entirely from the amount of alcohol, given that the beer holds no residual sugars at all. After this we get pineapple, acacia-flowers, red fruit on alcohol, a delicate woodiness and always those Brett flavours to enrich the whole. Her finale is soft, long and fruity, but all the while without being sugary. Her saturation is very light, which reinforces the vinous character of the beer. It’s a true beer fit for keeping, complex but nonetheless dangerously easy to drink. Beware…

Bottle. Murky dark yellow body, white head. Tart, funky taste, some mild honey, fruity notes, but mostly funky and light. Solid really but not much more than that.

Sympathique

Bottle, 330 ml. Shared with Max, Miro B and Cvrle. Cloudy golden, large white head. Fruity, yeasty, vinous, funk, moderate sourness. Easy drinkable for the abv, wouldn't say it's nowhere near 10%.

A light yellow beer, a head is big and blond. Aroma is great, frutiness of citrus, green apples, spicyness, some sourness and barrel, fresh. Taste has green apples, general fruitness, sourness, barrel. Medium bodied, nicely strong carbonation to lightening palate. Great beer, nicely refreshning.

Hazy dark blond colour, white foam. Incredibly complex saison. Tart, vinous, fruity along with typical de la Senne profile. Very nice, tart, fruity and some bitterness.
