Golden colored, crisp, high alcohol Belgian-style ale. Simple ingredients lead to a very complex beer in this case. Northwest two-row malt is mashed without the addition of specialty malts for a light, golden color. The Wort is lightly hopped in the kettle for minimum bitterness and Willamette Hops give the beer a subtle, hop flavor and aroma. Light sugars are also added during the boil in the Belgian tradition to achieve the desired higher alcohol percentage and unique fermentation flavor by-products. We ferment this beer with a classic Belgian yeast strain which results in a crisp, golden champagne-like ale with perceivable fruity overtones and warming alcohol undertones.

Bottle: Poured a orange burnt copper with a whispery white thin head. Aroma is strong on sticky fruit and caramel malt. Taste is sticky slick caramel, boozy fruits, and light hops bitter. Finish is peppery and spice, slight drying.

Shipped to me by my wife on a trip to Portland. Sampled from a 12 oz brown bottle this beer poured a very cloudy golden color with a large foamy yellow-white head that lingered and left good lacing. The aroma was apricot, honey, bread and clove. The flavor was sweet candied apricots and pears with notes of bread, sugar, plum, clove and honey. Rich and full of flavor this one really impressed me. The finish was long, sweet and fruity with bread and alcohol lingering. Thick and full bodied. Wonderful.

Location: Bottle at Max and Andy's Fantasy Tasting, 5/1/10

Aroma: The nose is fairly sweet, light spice, malty notes, yeast
Appearance: It pours a clearish golden color with light lacing
Flavor: Taste is similar to the nose, spicy and sweet flavors, some veggie notes
Palate: The body is medium, fairly soft carbonation, with a slightly astringent finish to it
Overall Impression: Overall, this is an OK Tripel, but not great. It's a lightly too sweet for my tastes and the vegitation and astringency in the finish don't really work that well either. Not terrible stuff, but not great either.

Bottle. Pours hazy gold with a weak, white head. Plenty of phenols and clove in the aroma. Flavor is sweet with some light syrup, tart fruit and Belgian sugar. Medium in body with fizzy carbonation and mild warmth. Finishes lightly dry and very sweet. An interesting take on the style.
