Fantôme’s winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can’t so for sure what this year’s beer will be like, but it is sure to please lovers of Dany’s beers.

Tasted from the tap on the 03/02/2017. Pale brown colour with a medium beige head with a good retention. Vinous Aroma with herbs, pepper and coriander. Taste is spicy with some fruits and herbs. Next one please!

Bottle (from etre gourmet). Looks like a bottle. Aroma is spices, sourness, yeast, Flavor is spices, yeast, fruits. Finish is also spices. Overall: good.

Poured from a 750 ml bottle, likely a 2011 vintage. Aroma is somewhat fruity with some stone fruit and green grapes. Light citrus and acidity. Hints of grain and wheat. A bit of a light oak and woody note. Faint clove phenolic notes and faint floral notes. Pours a fairly clear, yellow gold color with a large, moderately thick, frothy, white head that recedes fairly quickly but is replenished for a bit before it fades to the edges and disappears. No lacing or legs. Flavor is slightly sweet with some light lemon-lime zest. Light acidity. Some light grain, cracker and wheat notes. Light stone fruit and floral notes. Hints of phenolic spice and some herbal notes. Some light watery, mineral notes. Medium bitterness. Mouthfeel is medium light bodied with medium to medium high carbonation. Low astringency and low alcohol warmth. Overall, an alright Saison, but not my favorite from Fantome. Nice fruit and citrus notes, but its a bit watery and bland (shocking for a ’tome).

F: pale brown, big, good retention. C: dark coppery to dark brown, hazy. A: herbal, spicy, peppery, brett, hint of vinous. T: malt, fruity, spicy, orange peels, caramel, green banana, very good and interestingly balanced, medium to full body, medium to high carbonation, worth to try, sample from vat @ Kerstbierfestival Essen 2016.

Tap into a snifter showing brown rims, opaque brown center, and sparse white foam. The nose shows sweet candy notes. The palate is moderately carbonated and light bodied. Flavors of tea and biscuits with a slightly sweet maltiness. Similar to a British pale ale.

Lots of caramelized malt and some florals. Cloudy brown pour with ok head and lacing. Light sweet finish with a touch of booze. Tap at Churchkey. 2015.

Bottle. Lovely clear deep amber with a beige head. A fair bit of sediment is left in the bottle. Reserved aroma of sticky bread crusts, spiced dough. Much more assertive to taste but with much the same features. Some stewed fruit as well as sticky dough. Firm bitterness with lots of spices at the end. Before that mostly sweet with only a hint of tartness. Wasn’t in the fridge but opened up more and more in the glass, with spices softening and more flavours (sour plums, dried banana, baked quinces, licorice) emerging. After a while there’s a little warmth from the alcohol. Another interesting but entirely well-mannered beer from Fantôme - times change it seems.

Bottle 750ml @ Gastropuben KICK Malt & Mat, Kristiansand
Pours clear golden with a off-white head. Aroma has notes of malt, floral, herbal, caramel, yeast and pepper. Taste is medium sweet and light bitter with a long malty, floral and peppber finish. Body is medium, texture is oily, carbonation is soft.

Bottle at cornelius. Pours murky orange, nose is caramel, toffee, light spices, taste is sweet, sickly, esters, fruity.
