This is our take on a historic style farmhouse beer from the south of
Belgium that uses 80% Organic Pilsen malt, 10% flaked Wheat, 10%flaked
oats and mash hopped with Hersbrucker Spat. We use a modified version of a traditional no-boil Berliner mashing and (non)boiling process before we primary ferment with our house yeast blend along with our other Brett and lactic acid bacteria blend and secondary for months before a generous dry-hopping of Huell Melon hops. Melon, floral and herbal aroma from the dry hopping(8 g/L) and mild tart/funky fruit from the Brett, this complex beer makes you wanna get up and dance!
