Dip in. Tawny with rouge depth. This bold Biscotti experiment takes a sour bruin base, aged in Vin Santo Barrels with almonds for over a year and gently infused with vanilla beans. Bursting with Amaretto and Brett leather character. The first mouth-watering sip is sour and vinous but quickly rounds out into a decadent almond and vanilla finale.

Keg at BrewDog Leicester. Purplish mid-brown and translucent with an absolutely massive beige head. Notes of balsamic vinegar, vanilla, Christmas pud. The taste is full-on sour with an intense vinegar kick, rounded by the balancing sweetness of the raisin. Sour, almost acrid finish with just enough carbonation to give it legs. Sour plums and cherries alongside more balsamic in the aftertate. Intense and not for the feint of heart.

Keg at Brewdog Soho. A hazed plummy, amber coloured pour with a fine off white head. Aroma is sweet and tangy, red applrz wood, raspberry, little toast. Flavour is composed of tangy sour, green apple little roast, pickle, raspberry little balsamic,. Palate is sour, prickly, highish abrasive carbonation. Cranberry. Little harsh.

Keg at brewdog doghouse. Pours deep orange, nose is almond, funk, vanilla, berries, taste is similar, tart, juicy, slightly creamy.

Keg at BD Inverurie. It pours hazy reddish - brown with a small, bubbly beige head. The aroma is tangy, musty, vinous, red wine vinegar, funk, vanilla, definite fruit cake, sukatnan, raisin, nougat and biscotti. The taste is tart, tangy, puckering, sherbet, pithy citrus, vinous, slight sweetness kicking about, toasted almond, nougat, some acidity, red wine, vinous, cranberry, redcurrant, puckering, red wine vinegar and wood with a tangy finish. Medium body and fine, prickly carbonation. Red wine character is a big part of this. Works better than expected anyhow. Fun stuff.
