Bottle. Clear amber beer with a nice cream head. Tart/light sour aroma with fruitiness. Malt and yeast flavor with summer fruit, tartness, and earthiness. Medium bodied. Yeast and tartness linger with brett, summer/tropical fruit, and malt.

Bottle at my birthday drinks, many thanks to Bruce! It pours cloudy golden/light orange with a small white head. The nose is wood, barnyard, vanilla, toasted coconut, apricot and peach. The taste is earth, brett, spice, orange, fleshy peach, apricot, hay, touch of alcohol and dough with a dry finish. Medium+ body, moderate carbonation and velvety mouth-feel. Good balance and flavour. Rather well done.

Bottle shared at CBC Clerkenwell during Paul’s Birthday Celebration - London. Thanks to Bruce for this one. Pours hazy yellow-gold with a light, creamy white head. Good funky nose, lots of poo, manure, light yeast notes. Light to medium sweet flavor with good funk, further poo character, light lemon, some dry dough. Light to medium bodied with average, massaging carbonation. Clean and dry to finish with manure, brett, hay, pale malts, faint grassy bitterness. Lovely. One of the beers of the day.

Bottle - Lemon grass, citrus, candy like sourness and grassy hops. Frothy head that dissipates but still sticks, cloudy gold. Lemon grass, sour citrus, grass and unfortunately a bit of medicine in the finish that kind of kills it for me. A great saison, just shy of awesome. I have a few that I will age to see what happens with the Bret.

Bouteille 750ml. Carbonation faible, corps moyen.

Bottle that I’ve had for nearly a year now thanks to a trade to Canada. Pours with a nearly crystal clear yellow hue with a massive white head with some staying power. Great lace! Aromas are of tropical fruit, raw coconut and citrus, medium oak tannins, sautern grapes, rick oak tannins and lactone, dill and vanillin, caramelized wood flavors. Quite elegant, a bit of buttery chardonnay, nice. Flavors follow suit with rich and caramelzied deep oak flavors, tannins, lactone, dill, funk, pineapple. Some saw dust, medium acidity, good funk, and utterly delicious. I don’t think the flavors are the same, but for some reason the experience with this bottle reminds me of Squatter’s Fifth Element. A completely unexpected, unique and delicious sour. Hugely dominated by oak character. Moderate citrus from the beer itself (feels hop centric, but I am not sure, could be yeast based), light phenolics, some poached pear. Feels richer than it is. Lively and fine carbonation, medium body with a dry and tannic finish. Quite and elegant beer. Wish I could get more, as it is a good one. Quite impressive!

Bouteille 750ml.

Golden coloured body with a large, five centimetre tall white head and a nice bit of effervescence from the bottom and sides. Medium-bodied; Strong yeastie and wheatie note with a lot of movement, some light sugars, a hint of herbal and grassy notes, some light spices and a hint of brett noticeable. Aftertaste shows some nice effervescence, a good yeast note and a bit of herbal hops and malt which show well, but not as great as most other reviews show and I didn’t get any real sour notes at all, just a few hints of brett. Overall, a nice beer with bunches of good flavour, but nothing ridiculously good as expected and for the price! I sampled this 75 cL bottle purchased from Best Cellars (now doesn’t exist) in Arlington (Clarendon), Virginia on 04-July-2011 for US$23.99 sampled at home in Washington on Thanksgiving, 22-November-2012.

Cloudy, amber and with a big head. Fun aroma - woody, winey, apricot, a little funky. Rich, intense taste. Full body. Vinous notes, wood, with light alcohol, all kinds of spicy, honeyed complexity. Sweet citrus notes and light pepper, and of course a little noble rot accent. Very complex. Just the slightest bit of tartness late. You don’t have beers this good very often.
