Cherry, chocolate, and chipolte. A fantastic combination that just had to be made into a mead. We took a small amount of the cherry chipolte Melomel and added raw cacao nibs. The result is a melody of spice from the peppers followed by the tartness of the cherry. It finishes out with a creamy kiss of chocolate. We didn’t make much, don’t let this one get away. This mead begs to be paired with chocolate dessert.

Colorado mead tasting 2012 - turbid purplish red - aroma of cherry, a touch of dry cocoa, a hint of smoke, light spice - some light vegetal character from the peppers, but it is easy to ignore - hard to evaluate if this is good or bad - flavor is sweet cherries up front, followed by some tartness/acidity - the chipotles come on strong through the middle and finish - smoke, moderate heat - cocoa in the finish, but the heat overpowers it - I love heat, though, so I can’t complain - I dig it, to an extent, but it is a bit messy.

2012 Colorado Mead Tasting at Armin’s house. Thanks to Stephen! Pours a clear, reddish violet appearance with no head. Smoky, peppery spicy, cherry, dark chocolate, kind of strange aroma. Very strange, rich cherry flavor that morphs into a weird pepper, veggie flavor. There’s some chocolate, cocoa, earth, and honey mixed in. Kind of an enigma and I still don’t know if I like it or not.

Bottle shared by Steve. Pours dark cherry. Nose/taste of the perfect blend of black cherries with pits, cocoa, chili pepper, earthy vanilla and honey. Finishes with light chili pepper tingling the back of the palate. Fuller mouth feel than most meads. Slight dryness in trailing chili pepper finish after initial cherry/cocoa sweetness.
