Our Gypsy is all about the gold; she features a bright golden color with slight haze, and an untamed white head. As you would expect from a Chamomile Wheat, Gypsy features a flowery bouquet and flavor, accented by spice notes, sweetness from locally harvested honey, and a crisp wheat finish. Our Gypsy also has a royal lineage, as we use Egyptian Chamomile in the brewing process, just like the pharaohs of old used to.

can, rated around Jan 2017 - Pours a hazy pale yellow and smells of wheat, yeast, and spice. It tastes sweet with assertive spiciness from the chamomile. Yeasty. Light to medium bodied. Okay.

Sample at Twenty Tap. Slightly murky golden color with a medium white head that recedes steadily. Short strings of lacing on the glass. Floral aroma with notes of wheat and malt. Light to medium body with flavors of herbal wheat, fruit and malt. The finish is very floral from the chamomile, leaving a spiced fruity aftertaste. Decent overall.

Draft. Cloudy golden body with a frothy white head. Aroma of raw grain, chamomile, pepper, spice, toasted grain. The flavor is moderately sweet and lightly to moderately bitter. It finishes lightly sweet and moderately bitter. Medium body, velvety texture, lively carbonation. Spicy and floral with a lingering bitterness. At the same time, the strong chamomile flavor leaves an astringent plastic taste in the finish. And because of the strength of the floral notes, the other flavors are muddled.

Draft at GABF. Pours semi-cloudy gold with white head. Nose and taste of light spice, chamomile, light wheat and lemon. Lots of chamomile. Medium body.

Draft. Chamomile and light wheat malt aroma. Golden yellow with moderate head. Intense chamomile flavor. Very nice and unique but avoid if you don’t like chamomile.

Tap at brewery. Sweet floral chamomile aroma. Golden yellow with a white head, creamy lacing. Strong floral chamomile flavor. Light body, low carbonation. This beer was all about the chamomile, and I love chamomile, so I loved everything about this beer.
