Tired of talking my friends into pit stops at beer bars before heading “out” — in fear of having to drink bland lager all night — I set out to craft an ale that would act as companion throughout the evening. Levon is assertively hopped and fermented dry using champagne yeast. The yeast and the hops in combination with a simple malt bill provides the beer with a quality of being rich in taste yet refreshing.

Immediately turned to 10cm porous head in the glass. Dissipates a few cm but remains challenging to pour... Persistent 5cm egg white head. Slightly cloudy mid yellow. lemon curd on the nose. Slightly metallic but fades with time. Slightly floral. Belgian yeast. Nice creamy lemon in the mouth. Touch of sweetness. Some further citrus fruit, grapefruit. Also here a hint of floral. Spice from the Belgian yeast Lingering lemon. Tiny bit watery, had to check the alcohol content: wow 6.5 that is not obvious. Balanced but a bit innocuous.

Bottle. Clear pale golden color with white head. Aroma is spicy yeast, pale malts, mild esters. Taste is a bit fruity, a bit flowery, floral, almost warming booze. High carbonation. Alright.

Bottle from Max, thanks! Slight haze, moderate but lasting head. Malty grain nose, though mild and not wort-like. Very pleasant fine-bubbled carbonation. Some funky sour-reminiscent, almost rubbery notes in there. Very present bitterness, quite dry, some citrus/grapefruity notes but not much hop aroma (indeed it's a bit expired so that's not unexpected). It's aged well for a pale ale. Honestly it's too lasting/not so pleasant bitter character & skewed balance for my taste.

330ml bottle. Pours hazed copper with a frothy white head. Aroma: yeasty, herbal, coriander, hints of grapefruit & lime, pepper spice. Taste: light to moderate sweet & light bitter, dry, herbal, yeasty, citrus hints, a little resin, pepper. Medium bodied with average to generous carbonation.

Clear golden color and a nice white head. Quite Lite. fruity, yeasty, hopy. A little simple
