On tap at Cellar 3. It pours a pale salmon color with a white head. The aroma is has some tart lemony plum notes with a little funk and oak. The flavor has clean acidity. A bit more tart than the others in this series with good grapefruit and plum character. A little oak in the finish. Probably my favorite of the ones I tried.

750 ml bottle into tulip glass, bottled on 5/7/2015. Pours lightly hazy deep orange/copper color with a 1-2 finger dense off white head with good retention, that reduces to a small cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big tart cherry, plum, raspberry, pineapple, green apple, red wine, vanilla, oak, pepper, wheat, cracker, bread, hay, straw, grass, musty funk, leather, light white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of plums, fruity/funky/acidic yeast, bready malt, and oak barrel notes; with great strength. Taste of big tart cherry, plum, raspberry, pineapple, green apple, red wine, vanilla, oak, pepper, wheat, cracker, bread, hay, straw, grass, musty funk, leather, light white vinegar, and yeast/oak earthiness. Moderate amount of fruity/acidic tartness and yeast spiciness on the finish; with lingering notes of cherry, plum, raspberry, pineapple, green apple, red wine, vanilla, oak, pepper, wheat, cracker, hay, straw, grass, musty funk, leather, light white vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of plums, fruity/funky/acidic yeast, bready malt, and oak barrel flavors; with a great sweetness/tartness balance and zero cloying flavors after the finish. Medium-high carbonation and medium body; with a very smooth, moderately acidic, and lightly creamy/bready mouthfeel that is great. Lightly crisp finish with some lingering acidity after the finish. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an awesome fruited wild ale. All around great complexity, robustness, and balance of plums, fruity/funky/acidic yeast, bready malt, and oak barrel flavors; and very smooth to sip on with the balanced acidity. This is labeled as a saison on the bottle, and while some spicy yeast notes are present; I’d still classify this as a sour/wild ale due to acidity and overall flavor profile. None of the spices listed on the bottle are noticeable in the final beer either. A highly enjoyable offering regardless.

750 c&c from Belmont Station. Pours a sort of pinkish orange gold with a slight white head. Aroma of brett, and plum and/or berry. Near med body. Flavor has sour plum, pretty solid brett, and wood and seemingly red berry. It’s actually sour enough to muddle the flavor aspects a bit, and it might fairly be labeled complex. With time it gets a bit more like sweet/tart than pure sour. Quite tasty.
