What the Pho, is our spiced porter collaboration with legendary Urban Belly Chef Bill Kim.
Using our Bridgeporter base, we aged this beer on oak and sassafras staves while infusing it with the base of the Vietnamese soup. We then dry-spiced they beer with chef Kim’s secret 5-spice blend that includes, among a few other mystery ingredients, star anise, coriander, and soy. After your first sip you will indeed say to yourself “What the Pho is this?”

Bottle thanks to Adam! Pours a near clear amber brown with a light tan head that dissipates to the edges. Aroma has some soy sauce with a bit of sweet grains and a bit of bread. Flavor is similar and is a bit bready.

Draft at Olympic. From notes. All kinds of weird spices in here. Good brew, but not really my thing.

Bottle. Pours dark brown tan head. Nose/taste of black licorice, coffee, cocoa, clove, cinnamon, oak, sassafras and star anise. Medium body.
