Again, the basic old and young lambic are matured in oak casks. But here we add to one year-old lambic about 400 grams of real cherries per litre. This creates a second fermentation in the casks. Oude Kriek Boon then undergoes a further fermentation in the bottle and has an alcohol volume of 6.5%. After several months, the flavour has matured to the desired taste.
Oude Kriek Boon is a test of your patience. It should lie about 2 years in the bottle. At first, it tastes of fruit, especially sour cherries. Oude Kriek Boon eventually evolves into a deep taste reminiscent of Port or Madeira wine. This is kriek at its best.

Fles thuis geprobeerd. Het heeft een diep rode kleur met weinig schuim. Het heeft een aroma van roodfruit en kersen. De smaak is kersen, fruitg en wat droog.

Tap at Damian. Moderately sour. Med-med-light cherry flavour, feels pleasant, natural, juicy, fruity. Light sweetness. Light funk, pretty complex. Well balanced, easy drinking. Very good. Carbonation could be a bit higher.

Tap@Taphouse, Copenhagen (25/01/2018) - pours scarlet red with a white pinkish head. Medium tart fruity with some prominent cherry, cherry tunes, cherry skin, some underlying sweetness coming through, light funky, medium body and acidity, balanced tart cherry finish.

From the tap at FOB, Rimini, Italy. Pours dark red with beautiful reflections. Aroma is intense of cherries under spirit. Body is kind of average, with tickling carbonation. Taste definitely has some sweetness to it, with good sourness, but not excessive. Finish is nice and short. Also a bit of balsamic.
