Disaster is part of the Sandy Project. It all started when we experimented with a souring lactic rest of 24 hours on our session stout -to see what would happen- only to have Hurricane Sandy extend souring 8 more days. The next step involved jiggering the brewing process to recreate those conditions for the charity project, Something Like Sandy. Disaster is some of that liquid put in a barrel in the funkiest part of our cellar and left alone except for the periodic topping up when we brew our Carton of Milk. Drink disaster and explore the evolution of “what if?”
