The name has changed, not the recipe! Our winter beer is back, with her caramel and chocolate flavours, the creamy foam, her fruity nuances, and her dry and bitter finish."

Thick, light-greige head, fast reduced, over fully opaque dark-brown beer. Thick, sweet-roasted aroma with C-hops, vanilla beans, bit of liquorice. Again liquorice, some C-hops, and more dry spices. Combination of sweet chocolate-like malts, and some (green) spice, makes it taste as After Eight. Well-bodied, certainly for its 6.5%. Slick. Obviously they took away quite a bit of C-hops from the 2007. Still, I’m unsure about splitting this beer following vintages. Thanks to Vinnie!

750ml bottle, 1 year + old. Still gushed up when it was opened, no shortage of carbonation. Deep reddish amber-brown color, with a huge rusty beige head. Some bitterness in the aroma, a nice astringency. The beer has devolved a little, with some watery, doughy malt tones where there might have been a fresher yeasty feel. More hop presence than your typical Belgian Xmas beer. There is a little spicy edge to the beer, probably just the hops. A interesting interpretation of the style, though not really world class stuff.

Hazy dark amber color, creamy head. Dusty malt and caramel aroma. Good body strength, caramel flavor with an unfortunate vegetables correction; but luckily there is also some evident altough aged hopping, quite strong. Not at its peak but quite good.

pours brown, off-white head aroma, hoppy, malty, sweet sugar, Belgian yeast with a residual yeast nose and a light roast. flavor, caramel malts, light spices, yeasty with a good grassy hop presence. Some brown sugar and a caramel, bitter chocolate finish, the finish keeps a mild bitter flavor throughout followed by mild spiciness.

Cloudy chestnut with a big off-white head. Chocolate, fruit and spice aroma with a mineral note. Flavour has malt, chocolate, mint, and dried fruit, but it’s just too ordinary Belgian.... Doesn’t stand out

It looks like the wolf is still having his way with poor little red riding hood. Bottle at first DC tasting of 2010. Bright orange color with a white head that clears quickly. Aroma of orange peel and coriander. Flavor has malts up front, then a bit our sour in the middle, some citrus, and a slightly bitter and dry finish. Interesting.

750ml bottle sampled at the DC Local tasting. Pours a translucent, hazy, orange amber with a thin, slightly spitty white head. Aroma is candy, spices, fruits, apples, pears. Flavor has a lot of bread, grains, toast, fruits. The flavor is very nice and not at all Christmas-y. Finish is a little dry.

Hazy dark amber to mahogany color. A beer based on caramel and chocolate, quite dry, too much yeasty, and even a bit puckery. This beer needs some months of ageing.

Bottle. Pours a clear amber with a thin tan head that lasted for a bit. Aroma is strong with sweet malts (caramel). Undertones include yeast and just a touch of citrus. Flavor has the same strong sweet caramel malt note with undertones of spices (nutmeg and cinnamon), liquor and a bit of yeast notes.

Bottle 33 cl. Pours an almost clear amber with a solid off-white head. Sweet aroma of overripe fruit and yeast. Medium body, roasted malt, overripe fruit and spices - even a little chocolate. Some bitterness. 161209
